Description

This spiced lentil salad is a real delight, perfect for a light lunch or a sunny picnic. I love preparing it because it is both simple and full of flavors. Green lentils, tuna and red onion go wonderfully with spices and sherry vinegar dressing. It is a recipe that I often make in the summer, because it is fresh and nourishing. It can be prepared in advance and keeps well in the refrigerator. Do not hesitate to add other vegetables such as diced peppers for even more colors and vitamins! A real treat for the taste buds!

Ingredients (11 ingredients)

  • 200 g of green lentils
  • 1 boite of tuna in water
  • 1 piece red onion
  • 6 pinch of paprika
  • 6 pinch of cumin
  • 4 pinch of curry
  • 2 c. à s. of sherry vinegar
  • 2 c. à s. of olive oil
  • to taste Parsley
  • 1 packet of salt or fine salt
  • to taste Pepper

Preparation (4 steps)

Cooking the lentils

Thermomix® Setting
25 min/212°F/Speed 1/Linkslauf 100 Reverse

Pour 200 g of green lentils into the Thermomix bowl. Add 600 ml of water and a pinch of salt. Program 25 min/100°C/Stufe 1/Linkslauf.

Drain the lentils

Once cooked, drain the lentils and pour them into a salad bowl. Rinse the Thermomix bowl.

Preparation of the vinaigrette

Thermomix® Setting
10 sec/Speed 3

In the clean Thermomix bowl, pour 2 tbsp of sherry vinegar, 2 tbsp of olive oil, 6 pinches of paprika, 6 pinches of cumin, 4 pinches of curry, a pinch of salt and pepper. Mix 10 Sek./Stufe 3.

Assembling the salad

Finely slice 1 red onion. Add the sliced red onion, a can of drained tuna in water and the vinaigrette to the lentils. Mix gently. Sprinkle with fresh chopped parsley before serving.
