Description

This potato-cucumber salad is a true classic that is especially refreshing in summer. The combination of potatoes, crunchy cucumber and fresh dill makes it a light yet filling dish. I love how the acidity of the lemon juice and the slight spiciness of the onion harmonize perfectly. The salad is quick to prepare and tastes good both warm and cold. Ideal for a quick lunch or as a side dish for grilling. If you like, you can add some yogurt or sour cream to make it creamier. An absolute must for all potato and cucumber lovers!

Ingredients (10 ingredients)

  • 40 g Onion, red, peeled
  • 200 g Stewing cucumber, peeled and seeded
  • 1 etwas Dill
  • 1 slice Breakfast bacon
  • 0.5 tsp Vegetable broth, granulated
  • 1 tbsp Lemon juice
  • 1 etwas Salt
  • 1 etwas Pepper, white
  • 240 g Potatoes
  • 1 piece Tomato, small

Preparation (10 steps)

Chop onion

Halve the peeled red onion and place in the mixing bowl. Chop for 3 seconds/speed 5.

Remove onion rings

Remove the chopped onion from the mixing bowl and set aside.

Prepare stewing cucumber

Cut the peeled and seeded stewing cucumber into slices and set aside.

Chop dill

Thermomix® Setting
3 sec/Speed 8

Wash the dill, shake dry and place in the mixing bowl. Chop for 3 seconds/speed 8. Transfer and set aside.

Fry bacon

Cut the breakfast bacon into coarse pieces and fry crispy in a pan without adding any fat. Remove and drain on kitchen paper.

Sauté onions and cucumbers

3 min/248°F/Speed 1 120

Put the bacon fat in the mixing bowl. Add onion rings and cucumber slices and sauté for 3 min./120°C/speed 1.

Deglaze and simmer

Thermomix® Setting
5 min/212°F/Speed 1 100

Dissolve the granulated vegetable broth in 125 ml of hot water. Add the broth to the onions and cucumbers in the mixing bowl and simmer for 5 min./100°C/speed 1.

Season and mix

Thermomix® Setting
10 sec/Linkslauf Speed 1 Reverse

Add the chopped dill and lemon juice to the mixing bowl and stir in for 10 seconds/reverse rotation speed 1. Season with salt and pepper.

Let the salad steep

Cut the potatoes into slices and mix with the cucumber vegetables in the mixing bowl. Let the salad steep for about 20 minutes.

Add tomatoes and arrange

Wash the tomato, cut into wedges and add to the salad in the mixing bowl. Season the salad again and arrange. Sprinkle the bacon over it.
