Description

This vibrant rice noodle salad is a delightful combination of textures and flavors. The soft rice noodles mingle with crisp vegetables, while the smoked fish adds a savory depth. Ingredients (12 ingredients)

  • 120 g rice noodles
  • 1 tsp reduced-salt tamari
  • 10 g ginger
  • 1 piece lime
  • 1 tbsp honey
  • 10 g coriander
  • 1 piece red chilli
  • 1 piece carrot
  • 0.5 piece cucumber
  • 1 piece spring onion
  • 80 g edamame
  • 2 piece smoked fish fillets

Preparation (5 steps)

Cook Rice Noodles

Cook the rice noodles according to package instructions. Rinse under cold running water and set aside.

Prepare Dressing

Thermomix® Setting

Add 10g ginger, 10g coriander and 1 red chilli to the mixing bowl and chop for 5 Sec./Stufe 5.

Mix Dressing

Thermomix® Setting
10 sec/Speed 3

Add 1 tsp reduced-salt tamari, juice and zest of 1 lime, and 1 tbsp honey to the mixing bowl. Mix for 10 Sec./Stufe 3.

Combine Salad

Thermomix® Setting
10 sec/Speed 2/Linkslauf Reverse

Add 1 carrot (cut into matchsticks), ½ cucumber (sliced), 1 spring onion (sliced), 80g edamame and cooked rice noodles to the mixing bowl with the dressing. Mix for 10 Sec./Stufe 2/Linkslauf.

Serve

Divide the noodle salad between two bowls and flake over 2 smoked fish fillets. Scatter over a few coriander leaves to serve.
