Description

These forest mushroom chicken rolls are a comforting and flavorful dish, perfect for a festive meal or a Sunday brunch.   • 4 piece eggs
  • breadcrumbs
  • 1 kg forest mushrooms
  • 6 piece thinly cut chicken fillets

Ingredient preparation

Spread the chicken fillets on a tea towel. Finely chop the garlic and parsley.

Cooking the mushrooms

Thermomix® Setting
5 min/248°F/Speed 1 120

Put the chopped garlic and parsley in the Thermomix bowl. Add 1 kg of forest mushrooms, cut into pieces. Cook for 5 minutes at 120°C, speed 1.

Filling the chicken fillets

Spread the mushroom, garlic and parsley mixture in the center of each chicken fillet.

Roll and secure the fillets

Roll each chicken fillet over itself to form a roll. Secure with a toothpick.

Preparation of the breading

In a shallow dish, beat 4 eggs. In another dish, place the breadcrumbs.

Breading the rolls

Dip each chicken roll in the beaten egg, then in the breadcrumbs, making sure to coat them well.

Pan cooking

Heat oil in a pan. Cook the breaded chicken rolls for 15 minutes over medium heat, turning them regularly so that they are golden brown on all sides.
