Description

This Quinoa Pot with Sweet Potato, Spinach and Feta is a protein-rich and vegetarian main course that can be prepared quickly with the Thermomix®. The main ingredients are quinoa, sweet potato, baby spinach and feta. In just 35 minutes, a healthy and filling dish for 2 servings is created. Ideal for light cuisine or as a nutritious lunch.

Ingredients (11 ingredients)

  • 200 g Quinoa
  • 1 Stück Onion
  • 1 Zehe Garlic
  • 100 g Baby spinach
  • 400 g Sweet potato
  • 1 Stück Avocado
  • 150 g Feta
  • 1 EL Olive oil
  • 600 ml Vegetable broth
  • Salt
  • Pepper

Preparation (6 steps)

Wash quinoa

Put 200g quinoa in a sieve and wash under running water.

Chop onions and garlic

Put 1 onion and 1 clove of garlic in the mixing bowl and chop for 3 sec./speed 5.

Sauté onions and garlic

Add 1 tbsp olive oil and sauté for 3 min./120°C/speed 1.

Add quinoa, sweet potatoes and broth

Add 200g quinoa, 400g diced sweet potato and 600ml vegetable broth.

Cook quinoa

20 min/212°F/Speed 1 /Linkslauf 212°F Reverse

Bring everything to a boil once and simmer covered for 20 min./100°C/speed 1/reverse rotation. Stir occasionally in between and add a little water if necessary.

Stir in spinach, avocado and feta

Stir in 100g washed baby spinach, 1 diced avocado and 150g coarsely chopped feta and season with salt and pepper.
