Description

This hearty casserole with steaks and black salsify is a savory main course for the cold season, prepared in the Thermomix®. The creamy sauce made from milk, crème fraîche and butter harmonizes perfectly with the meat and vegetables. The gratin spice gives the dish a special touch. In about 60 minutes, a festive meal for 2 people is created. Ideal for those who are looking for a filling and tasty family meal.

  • 250 ml Milk
  • 150 g Crème fraîche
  • 2.5 EL Butter
  • 2 EL Flour
  • 2 g Gratin spice
  • Salt
  • Pepper
  • Sugar
  • 500 g Potatoes, floury
  • 300 g Black salsify
  • 100 g Grapes, blue
  • 150 ml Red wine
  • 2 Stück Pork loin steaks
  • 1 EL Oil
  • 1 g Onions, ground
  • 0.6 g Garlic, granulated
  • 0.4 g Nutmeg, ground

Preparation (10 steps)

Preheat oven and heat milk

Preheat oven to 200°C (convection). Add 250 ml milk and 150 g crème fraîche to the mixing bowl and heat for 4 min./90°C/speed 1.

Prepare béchamel

For the béchamel, add 2 tbsp butter to the mixing bowl and melt for 3 min./50°C/speed 1. Add 2 tbsp flour and mix for 20 sec./speed 3. Carefully add the warm milk-crème fraîche mixture while stirring constantly for 1 min./speed 2. Season with 2 g gratin spice, salt and pepper for 10 sec./speed 3. Clean the mixing bowl.

Mix flour

Add 2 tbsp flour and mix for 20 sec./speed 3.

Add milk-crème fraîche mixture

Carefully add the warm milk-crème fraîche mixture while stirring constantly for 1 min./speed 2.

Season

Season with 2 g gratin spice, salt and pepper for 10 sec./speed 3. Clean the mixing bowl.

Prepare and cook potatoes

4-5 min/212°F/Gentle stir speed 212°F Reverse

Wash, peel and cut 500 g potatoes into approx. 0.5 cm fine slices. Add potato slices to the béchamel and simmer for 4-5 min./100°C/gentle stir setting. Pour the potato-béchamel mix into the casserole dish and bake in the oven for approx. 20 min.

Prepare and cook black salsify

10-12 min/212°F/Speed 1 212°F

Wash 300 g black salsify and cut diagonally into approx. 0.2 cm fine slices. Add 200 ml water to the mixing bowl, add black salsify slices and simmer for 10-12 min./100°C/speed 1. Season with salt and sugar and refine with 1 tsp butter.

Caramelize grapes

Wash and halve 100 g grapes. Caramelize 2 tbsp sugar in a cleaned small saucepan, deglaze with 150 ml red wine and simmer for approx. 5 min. until the liquid has reduced to a syrupy consistency. Add grapes and remove the pot from the heat.

Sear meat

Wash 2 pork loin steaks and pat dry. Heat 1 tbsp oil in a pan over medium to high heat. Sear the steaks on both sides for approx. 2-3 min. until golden brown and season with salt and pepper.

Arrange

Remove gratin from the oven, arrange on plates with steaks and black salsify and serve with red wine grapes.
