Description

This Jackfruit Sub is a delicious and quick dish, ideal for student cooking. The combination of coleslaw and fried jackfruit makes this sub a vegan treat. With a preparation time of only 20 minutes, it is perfect for a quick snack. The recipe is for one serving.

Ingredients (15 ingredients)

  • 50 g White cabbage
  • 1 Stück Small carrot
  • 1 EL Cashew Mayo (S. 28)
  • 1 TL Vinegar
  • 1 Prise Salt
  • 150 g Young jackfruit
  • 2 TL Vegetable oil
  • 1 TL Mustard
  • 1 TL Paprika powder
  • 1 TL Soy sauce
  • 0.25 TL Cumin, ground
  • 1 EL BBQ Sauce
  • nach Geschmack Salt, pepper
  • 0.5 Stück Baguette
  • 0.5 Stück Onion

Preparation (3 steps)

Prepare coleslaw

Cut 50 g of white cabbage into very fine strips. Cut 1 small carrot with a julienne peeler or also with a knife as finely as possible. Put both in a bowl with 1 tbsp Cashew Mayo (S. 28), 1 tsp vinegar and 1 pinch of salt and knead with your hands for 2-3 minutes. Then set aside.

Fry jackfruit

Pull apart 150 g of young jackfruit with two forks and crush the coarse pieces. Heat 2 tsp of vegetable oil in a frying pan over medium heat. Add the jackfruit, 1 tsp mustard, 1 tsp paprika powder, 1 tsp soy sauce and ¼ tsp cumin and fry for 5 minutes. So that crispy spots are created, the jackfruit pieces should not be turned too often at the beginning. Finally, season with salt and pepper.

Top baguette

Cut open ½ baguette and spread the coleslaw in it. Then also arrange the jackfruit in it and insert some ½ onion rings.
