Description

This Kaiserschmarrn with raisins, spiced apples & cranberries is an autumnal dessert that is easy to prepare in the Thermomix®. Apples, raisins and cranberries add fruity notes. Preparation takes about 45 minutes and yields 4 servings. Ideal as a warm dessert or sweet main course for the whole family.

Ingredients (19 ingredients)

  • 30 g Raisins
  • 2 EL Rum
  • 2 Stück Apples (e.g. Braeburn or Elstar)
  • 1 Stück Vanilla bean
  • 1 TL Cornstarch
  • 100 ml Maple syrup
  • 20 Stück Cranberries (fresh or dried)
  • 1 Stück Bay leaf
  • 1 Stück Organic orange
  • 1 Stück Cinnamon stick
  • 400 ml Apple juice
  • 3 Stück Eggs (size L)
  • 300 ml Milk
  • 50 g Sugar
  • 1 Prise Salt
  • 200 g Wheat flour Type 405
  • 1 TL Baking powder
  • 30 g Butter
  • Powdered sugar

Preparation (6 steps)

Prepare rum raisins

Thermomix® Setting
2 min/212°F/Speed 1 212°F

Place 30 g of raisins and 2 tbsp of rum in the mixing bowl and cook for 2 min./100°C/speed 1. Leave the measuring cup on. Then let it soak for 30 minutes.

Prepare spiced apples

Thermomix® Setting
5 min/212°F/Speed 1, Linkslauf 212°F Reverse

Peel, quarter, core and slice 2 apples. Scrape out 1 vanilla bean. Dissolve 1 tsp of cornstarch in a little water. Put 100 ml maple syrup, apple slices, 20 cranberries, 1 bay leaf, vanilla bean seeds, zest of 1 organic orange, 1 cinnamon stick and 400 ml apple juice into the mixing bowl. Simmer for 5 min./100°C/speed 1, reverse. Leave the measuring cup on. Add the stirred cornstarch and stir in for 1 min./90°C/speed 2, reverse. Leave the measuring cup on. Set aside and let cool.

Prepare Kaiserschmarrn batter

30 sec/Speed 4

Separate 3 eggs. Put 3 egg yolks, 300 ml milk, 50 g sugar, 1 pinch of salt, 200 g wheat flour type 405 and 1 tsp baking powder into the mixing bowl and mix for 30 sec./speed 4. Leave the measuring cup on. If the batter is lumpy, pass it through a sieve. Insert the butterfly whisk. Put 3 egg whites into the mixing bowl and whisk until stiff for 2 min./speed 3.5. Add the rum raisins and stir in for 15 sec./speed 2.

Fry and bake Kaiserschmarrn

Heat 30 g of butter in a large ovenproof pan. Pour in the batter and let it set for about 3 minutes over low heat. Then bake in the preheated oven at 180°C top/bottom heat for about 6-8 minutes until the top side sets.

Turn Kaiserschmarrn over and finish frying

Remove the Kaiserschmarrn from the oven, turn it over and continue to fry on the stove over low heat for about 3 more minutes.

Arrange and serve

Tear the Kaiserschmarrn with 2 forks, arrange with the spiced apples and sprinkle with powdered sugar.
