Description

This emperor's mess with plum compote is a classic Austrian dessert that can be easily prepared with the Thermomix®. The fluffy torn pancake is served with caramelized plums and is ideal as a sweet main course or as a crowning finale to a menu. Preparation takes about 50 minutes and yields 2 servings. Perfect for cozy autumn days!

Ingredients (12 ingredients)

  • 75 g plain Flour
  • 110 ml Milk
  • 0.5 Prise Salt
  • 2 Stück Eggs (Size M)
  • 0.5 Pkg. Vanilla sugar
  • 1.5 EL Butter
  • 1 EL Icing sugar
  • 100 ml Grape juice (or 100ml red grape juice)
  • 50 g Granulated sugar
  • 0.13 TL Ground cinnamon
  • 1 Stück Cloves
  • 1 EL Lemon juice

Preparation (15 steps)

Prepare plums

For the compote, halve the plums and remove the stones.

Prepare starch mixture

Mix starch with wine or grape juice.

Prepare caramel

Spread 50g granulated sugar evenly in a wide saucepan and heat without stirring until a light caramel forms.

Cook plum compote

Thermomix® Setting
5 min/212°F/Speed 1 212°F

Carefully pour in the starch mixture, add 0.13TL ground cinnamon and 1 clove, bring to a boil and reduce by half. Add the plums and simmer for about 5 minutes at 100°C/speed 1.

Season plum compote and let cool

Remove 1 clove, season the compote with 1 tbsp lemon juice and let it cool.

Preheat oven

For the torn pancake, preheat the oven to 160 °C (top/bottom heat, 140 °C fan oven).

Prepare dough

Thermomix® Setting

Add 75g plain flour, 110ml milk and 0.5 pinch of salt to the mixing bowl and stir for 20 sec./speed 4.

Separate eggs and refine dough

Separate 2 eggs and stir the yolks with 0.5 pack vanilla sugar into the dough.

Whisk egg whites

Thermomix® Setting

Whisk egg whites with the butterfly for 2 min./speed 3.5 until stiff.

Fold in egg whites

Stir one third of the egg white into the dough, then carefully fold in the remaining egg white.

Bake torn pancake (Part 1)

Heat 1 tbsp butter in a large pan, spread a third of the dough in it and bake over medium heat for 2 to 3 minutes until the underside is golden brown.

Turn torn pancake and finish baking (Part 1)

Carefully turn and bake for about 2 minutes until done.

Tear torn pancake and keep warm (Part 1)

Tear into pieces. Place in an ovenproof dish and keep warm in the oven.

Bake torn pancake (Part 2)

Bake and divide the remaining dough in two portions in 1 tbsp butter each.

Arrange torn pancake

Arrange torn pancake, sprinkle with 1 tbsp icing sugar and serve with plum compote.
