Description

Caramelized Hazelnut Confection is a festive finger food from the Thermomix® with hazelnut kernels, sugar, butter, honey and bittersweet glaze. This vegetarian confection is ideal as a Christmas snack or dessert. The preparation takes a total of 75 minutes, the active working time is about 45 minutes. The recipe yields approximately 20 servings and is perfect for the winter coffee table or as a sweet treat.

Ingredients (5 ingredients)

  • 300 g Hazelnut kernels
  • 200 g Sugar
  • 2 TL Butter
  • 2 EL Liquid honey
  • 200 g Cake glaze bittersweet

Preparation (7 steps)

Prepare hazelnuts

Preheat the oven to 180°C circulating air. Spread 300 g of hazelnut kernels in a baking dish and roast in the preheated oven for about 10 minutes. Let the roasted nuts cool slightly. Place on a kitchen towel, fold the towel over so that the nuts are covered, and carefully rub the nuts with the towel to remove the skin.

Caramelize sugar

10 min/248°F/Speed 1 120

Put 200 g sugar in the mixing bowl and caramelize without lid for 10 min./120°C/speed 1. Observe the sugar and adjust the time if necessary until it is golden brown. Do not let the sugar get too dark, otherwise it will taste bitter.

Refine caramel

Thermomix® Setting
2 min/212°F/Speed 2 100

Add 2 tsp butter, 2 tbsp liquid honey and 3 tbsp water to the caramel in the mixing bowl and stir for 2 min./100°C/speed 2 until a homogeneous mass has formed. Scrape down from the edge with the spatula.

Mix in hazelnuts

Thermomix® Setting
30 sec/Linkslauf/Speed 2 Reverse

Add the peeled hazelnuts to the caramel in the mixing bowl and stir in for 30 sec./reverse/speed 2 until all the nuts are evenly coated with caramel. Scrape down from the edge with the spatula.

Shape nutcrackers

Use a spoon to place the caramel-nut mixture as small dabs on a baking sheet lined with baking paper. Let the nutcrackers cool completely and harden on the baking paper.

Melt glaze

Thermomix® Setting
3 min/122°F/Speed 2 50

Put 200 g cake glaze bittersweet in pieces in the mixing bowl and melt for 3 min./50°C/speed 2. Scrape down from the edge with the spatula.

Glaze nutcrackers

Coat the flat side of the nutcrackers with the melted cake glaze as desired and let dry on the baking paper.
