Description

This kefir-spelt bread is a hearty bread that is ideal for breakfast or as a side dish. It is prepared with spelt flour and kefir, which gives it a special taste. The preparation takes about 215 minutes, including the rising time of the dough. The bread is rich in fiber and is well suited for a balanced diet.

Ingredients (9 ingredients)

  • 450 g Kefir
  • 200 g Water
  • 18 g Fresh Yeast
  • 1 TL Wholemeal Spelt Flour
  • 150 g Spelt Flour 630
  • 300 g Spelt Flour 1050
  • 425 g Salt
  • 15 g Seeds of Choice
  • 80 g Saaten nach Wahl

Preparation (6 steps)

Dissolve Kefir, Water, Yeast and Sugar

Add 450 g kefir, 200 g water, 18 g fresh yeast and 1 teaspoon sugar to the mixing bowl and dissolve for 3 minutes/37°C/speed 1.

Add more ingredients and knead dough

Add 150 g wholemeal spelt flour, 300 g spelt flour 630, 425 g spelt flour 1050, 15 g salt and 80g seeds of choice and process for 5 minutes/kneading stage.

Let the dough rise

Transfer the dough to a bowl, cover and let rise for 1.5 hours.

Shape dough

After the rising time, place the dough on a floured work surface, fold several times and shape into an oval or round loaf.

Bake Bread

Place the loaf in a greased Roman pot or cast iron pot, flour it lightly, cut it and put the lid on. Bake in a cold oven at 240 degrees top/bottom heat for approx. 50 minutes on the lowest rack.

Finish baking bread

Remove the lid and bake again for 5-10 minutes without the lid. Keep visual contact so that the surface does not become too dark. Remove from the mold and let cool on a wire rack.
