Description

I love making my own ketchup! With fresh tomatoes from the garden, it simply tastes unbeatable. The light smoky note and the sweetness of the brown sugar make it something special. This ketchup is perfect for burgers, fries, or simply as a dip for vegetables. The preparation is super easy and with the Thermomix® it's even faster. A great recipe to process the tomato harvest and create a delicious supply. It keeps well in the refrigerator and is always ready to hand when you need it.

Ingredients (8 ingredients)

  • 1.5 kg Tomatoes
  • 2 piece Onions
  • 1 clove Garlic
  • 2 tbsp Rapeseed oil
  • 130 g Brown sugar
  • 150 ml Apple vinegar
  • 1 tsp Smoked salt
  • 2 tbsp Pepper

Preparation (8 steps)

Prepare tomatoes

Pour boiling water over the tomatoes, then peel, quarter and remove the seeds. Peel and quarter the onions. Peel the garlic clove.

Chop onions and garlic

Put the onions and garlic clove in the mixing bowl and chop for 3 sec./level 5. Push down with the spatula.

Sauté onions and garlic

Add the rapeseed oil and sauté for 3 min./120°C/level 1.

Caramelize sugar

Thermomix® Setting
1 min/248°F/Speed 1 120

Add the brown sugar and let it caramelize for 1 min./120°C/level 1. Help with the spatula.

Add tomatoes and spices

30 min/212°F/Speed 1 100

Add the apple vinegar, the prepared tomato pieces, smoked salt and pepper to the mixing bowl and simmer for 30 min./100°C/level 1. Remove the measuring cup and place the simmering basket on top as a splash guard.

Puree ketchup

30 sec/Speed 10

Puree the tomato mixture for 30 sec./level 10 until a fine sauce has formed.

Season and bring to a boil

Thermomix® Setting
5 min/212°F/Speed 1 100

Season the ketchup again with sugar, vinegar and spices and add more if necessary. Then bring to a boil for 5 min./100°C/level 1.

Fill ketchup

Immediately fill the finished ketchup into a hot rinsed screw-top jar and close tightly. Turn the glass upside down and let it cool.
