Description

This lump bread is a hearty bread that is baked with cooked potatoes, rye and spelt flour. The preparation takes about 90 minutes, including the rising time of the dough. The bread is well suited as a main course or for breakfast and is vegetarian. It is baked in the oven and can be prepared in a cast iron pot or Roman pot.

Ingredients (10 ingredients)

  • 250 g cooked potatoes
  • 10 g fresh yeast
  • 250 g Water
  • 15 g brown sugar or honey
  • 100 g Rye flour type 997
  • 600 g Spelt flour type 630
  • 100 g Whole rye flour
  • 27 g Salt
  • 100 g Yogurt
  • 1 EL Vinegar (apple cider vinegar/balsamic)

Preparation (5 steps)

Chop potatoes

Put 250g cooked potatoes into the mixing bowl and chop for 30 sec./speed 4.

Add yeast, sugar, water and stir

Add 10g fresh yeast, 15g brown sugar or honey and 250g water to the chopped potatoes in the mixing bowl and stir for 2 min./37°C/speed 1.5.

Add flour, salt, yogurt and vinegar and knead

Add 100g rye flour type 997, 600g spelt flour type 630, 100g whole rye flour, 27g salt, 100g yogurt and 1 tbsp vinegar (apple cider vinegar/balsamic) to the mixing bowl and knead for 2 min./kneading stage.

Let the dough rise

Transfer the dough to a bowl, cover and let rise for 1 hour.

Shape the dough and bake

Fold the dough and shape it into a round. Cut into a greased, floured mold (cast iron pot, Roman pot) and bake with the lid on.
