Description

These oatmeal cookies are an absolute classic and super easy to prepare with the Thermomix®. I often make them when I feel like a crispy, not too sweet snack. The combination of oatmeal, butter and a hint of cinnamon is simply unbeatable. The dried fruit gives the whole thing a fruity note. They are perfect for a cozy afternoon tea or as a small energy source in between. The recipe is quick to make and the cookies keep well in a cookie tin. If you like, you can also add nuts or chocolate chips. A great recipe for the whole family!

Ingredients (10 ingredients)

  • 1 piece Egg - Size M
  • 250 g hearty oatmeal - large leaf
  • 125 g Butter
  • 100 g brown sugar - alternatively white household sugar
  • 1 Pck. Bourbon vanilla sugar
  • 0.5 tsp Cinnamon, ground - optional
  • 1 pinch Salt
  • 1 tbsp Wheat flour type 405 - alternatively spelt flour type 630
  • 1 tsp Baking powder
  • 3 tbsp Dried fruit - Cranberries or prunes, coarsely chopped

Preparation (5 steps)

Melt butter and roast oatmeal

Thermomix® Setting
3 min/122°F/Speed 1 50

Add 125g butter to the mixing bowl and melt for 3 min./50°C/speed 1. Then add 250g oatmeal and stir in for 5 min./100°C/speed 1. Transfer the oatmeal-butter mixture to a bowl and let cool.

Beat sugar and egg until frothy

2 min/Speed 3

Add 100g brown sugar, 1 packet Bourbon vanilla sugar and 1 egg to the mixing bowl and beat until frothy for 2 min./speed 3.

Add dry ingredients

20 sec/Speed 2

Add 1/2 tsp cinnamon, 1 pinch of salt, 1 tbsp wheat flour type 405 and 1 tsp baking powder to the mixing bowl and stir in for 20 sec./speed 2.

Stir in oatmeal mixture and dried fruit

Thermomix® Setting
30 sec/Speed 3 Reverse

Add the cooled oatmeal-butter mixture and 3 tbsp dried fruit (cranberries or prunes, coarsely chopped) to the mixing bowl and stir in for 30 sec./speed 3 reverse.

Shape and bake cookies

Preheat the oven to 180 °C top/bottom heat. Line one or two baking sheets with baking paper. Take 1 good teaspoon of the cookie dough per cookie and spread it onto the baking sheet with another teaspoon, pushing it together a little at the edge. Make sure to leave about 2-3 cm distance, as the cookies will widen a little during baking. Bake the cookies in the preheated oven for about 12 minutes.
