Description

Crispy potato pieces with herb dip are a simple vegetarian dish, prepared in the Thermomix®. Firm-cooking potatoes are seasoned with paprika, garlic and olive oil and baked until golden brown. The dip made from crème fraîche and mayonnaise with fresh herbs rounds off the dish. Ideal as finger food for parties, side dish or snack. Preparation time approx. 60 minutes for 4 portions.

  • 1 kg Potatoes, firm-cooking
  • 2 EL Sweet paprika powder
  • 1 EL Garlic powder
  • 3 EL Olive oil
  • 2 TL Salt
  • 2 EL Flour
  • 150 g Crème fraîche
  • 150 g Mayonnaise
  • 1 Bund Parsley
  • 1 Bund Coriander
  • 1 Stück Bell pepper, green
  • 0.5 TL Chili powder
  • Pepper

Preparation (4 steps)

Prepare potatoes

Wash, peel and cut 1 kg of potatoes into small pieces.

Season potatoes

Put the potato pieces into the mixing bowl. Add 2 tbsp sweet paprika powder, 1 tbsp garlic powder, 3 tbsp olive oil, 2 tsp salt and 2 tbsp flour and mix for 10 sec/speed 3/reverse.

Bake potatoes

30-40 min/392°F/Backofen 392°F

Place the seasoned potato pieces on a baking sheet lined with baking paper and bake in a preheated oven at 200°C top/bottom heat for 30-40 minutes until golden brown and crispy. Turn occasionally.

Prepare dip

30 sec/keine/Speed 8

Put 150 g crème fraîche, 150 g mayonnaise, 1 bunch of parsley, 1 bunch of coriander, 1 green bell pepper (cored and roughly chopped) and ½ tsp chili powder into the mixing bowl and purée for 30 sec/speed 8. Season with salt and pepper.
