Cabbage with white beans and poached egg.

Ingredients (13 ingredients)

  • 360 g White Beans
  • 150 ml Vegetable Broth
  • 1.5 Stk. Onion
  • 1.5 Stk. Pointed Cabbage
  • Parsley
  • 1.5 tbsp Olive oil
  • 1.5 Prise(n) Salt
  • 75 ml Vegan Cream Coconut
  • 3 Stk. Egg
  • 1.5 Prise(n) Pepper
  • 1.5 Prise(n) Nutmeg
  • 3 Scheibe(n) Spelt-Millet-Bread
  • 3 tbsp Sesame

Preparation

Wash pointed cabbage and cut into wedges. Peel and halve onion. Cut one half into strips, finely chop the other half. Prepare vegetable broth according to package directions. Drain beans in a sieve, rinse with water and drain. Wash, shake dry and coarsely chop parsley.

Sauté Onions

Heat 1.5 tbsp olive oil in a pan over medium heat. Sauté chopped onion in it until translucent.

Prepare Bean Puree

Add beans, vegan cream coconut and half of the vegetable broth to the sautéed onions in the pan and heat for 1-2 minutes. Remove from heat and finely puree with an immersion blender or mixer. Season with 1.5 pinch of salt and keep warm.

Boil Eggs

Bring water to a boil in a saucepan and cook 3 eggs in it for about 6 minutes until soft-boiled. Alternatively, cook to the desired doneness. Then quench in cold water, peel and halve.

Sauté Cabbage

Heat 1.5 tbsp olive oil in a pan over medium heat. Sauté onion strips in it until translucent, then add cabbage and brown on both sides. Pour in remaining vegetable broth and season with 1.5 pinch of salt, 1.5 pinch of pepper and 1.5 pinch of nutmeg.

Arrange

Toast 3 slices of spelt-millet-bread. Arrange cabbage, bean puree and eggs on plates. Sprinkle with 3 tbsp sesame and parsley. Serve with bread.
