Ingredients (12 ingredients)

  • 800 g White Cabbage
  • 350 g Fleckerl Noodles
  • 100 g Onions
  • 125 ml Vegetable Broth
  • 50 g Clarified Butter
  • 2 EL Brown Sugar
  • 1 EL Balsamic Vinegar
  • 1 TL Salt
  • 1 Prise Ground Caraway Seed
  • 1 Prise Freshly Ground Black Pepper
  • 2 EL Crème Fraîche
  • 2 EL Chopped Parsley

Preparation (7 steps)

Prepare the White Cabbage

Clean 800 g white cabbage, quarter it, remove the stalk and cut the cabbage into pieces about 2 cm in size.

Chop the Onions

Peel 100 g onions (approx. 2 pieces), quarter and place in the mixing bowl. Chop for 3 sec./speed 5.

Sauté the Onions

Add 50 g clarified butter and 2 tbsp brown sugar to the onions in the mixing bowl and sauté for 2 min./120°C/speed 1.

Simmer the Cabbage

10 min/212°F/Linkslauf Speed 1 100 Reverse

Add 125 ml vegetable broth, 1 tbsp balsamic vinegar, 1 tsp salt, 1 pinch of ground caraway seed and 1 pinch of black pepper to the mixing bowl. Add the prepared white cabbage and simmer for 10 min./100°C/Reverse speed 1. Use the spatula to push down as needed.

Cook the Noodles

While the cabbage is simmering, cook 350 g fleckerl noodles or short ribbon noodles in a separate pot according to the package instructions in plenty of salted water.

Mix Noodles and Cabbage

After the noodles have cooked, use tongs to transfer them directly from the pot, dripping wet, to the cabbage in the mixing bowl and carefully mix for 1 min./Reverse speed 2. Use the spatula to help.

Season and Serve

Season the cabbage noodles to taste. To serve, add 2 tbsp crème fraîche and 2 tbsp chopped parsley on top.
