Description

This duck stew is a comforting and flavorful dish, perfect for cold days. The duck meat, slow-cooked with vegetables and a touch of white wine, becomes tender and juicy.   • to taste salt
  • to taste pepper
  • 1 piece onion
  • 1 piece red bell pepper
  • 1 piece green bell pepper
  • 500 gr tomato puree
  • 1 container white wine
  • 100 gr smoked pork loin
  • 2 piece large potatoes
  • 2 piece carrots
  • to taste oregano
  • to taste paprika
  • to taste thyme
  • to taste black pepper
  • bay leaf

Preparation (10 steps)

Prepare the duck

Cut the duck into pieces and remove some of the fat. Set aside.

Brown the duck

In a pan with a little oil, brown the duck pieces on all sides. Remove and set aside.

Chop the onion and peppers

Chop the peppers

Sauté the vegetables

Place the chopped onions and peppers in the bowl. Add a little oil and sauté 5 min./120°C/Stufe 1.

Add the smoked pork loin

Add 100 gr of diced smoked pork loin to the bowl and sauté 2 min./120°C/Stufe 1.

Incorporate the tomato puree and spices

Add 500 gr of tomato puree, oregano, paprika, thyme, black pepper, bay leaf, salt and pepper to the bowl. Mix 10 sec./Stufe 3.

Add the white wine and the duck

Add 1 glass of white wine and the browned duck pieces to the bowl. Cook 10 min./100°C/Stufe 1/Linkslauf.

Add the potatoes and carrots

Peel and cut 2 large potatoes and 2 carrots into pieces. Add them to the bowl. Cook 45 min./100°C/Stufe 1/Linkslauf.
