Description

These lentil balls with vegetables are a vegetarian main course, ideal for the winter season and festive occasions. The combination of lentils, mushrooms and vegetables makes the dish hearty and nutritious. Preparation takes about 90 minutes and yields 4 servings.

Ingredients (19 ingredients)

  • 20 g dried porcini mushrooms
  • 170 g red lentils
  • 400 ml vegetable broth
  • 2 Stück onions
  • 2 TL butter
  • 8 EL oil
  • 40 g vegetarian grated cheese
  • 40 g delicate rolled oats
  • salt
  • pepper
  • 2 EL chopped parsley
  • 1 EL smoked paprika powder
  • 2 TL thyme leaves
  • 500 g strained tomatoes
  • 150 g cherry tomatoes
  • 400 g rainbow carrots
  • 1 Stück broccoli
  • 200 g white cabbage
  • 100 g oyster mushrooms

Preparation (9 steps)

Soak porcini mushrooms and cook lentils

Soak 20 g of dried porcini mushrooms in 200 ml of hot water. Cook 170 g of red lentils in 400 ml of vegetable broth for 15-20 min./100°C/speed 1 until soft. Then drain and set aside.

Sauté onions and mushrooms

Squeeze out the porcini mushrooms, collect the mushroom water and set aside. Chop the mushrooms. Peel and quarter 2 onions. Place 50 g of onions in the mixing bowl and chop for 3 sec./speed 5. Add 1 tsp butter and 1 tbsp oil and sauté for 5 min./120°C/speed 1. Add chopped porcini mushrooms and sauté for another 3 min./120°C/speed 1.

Sauté onions and mushrooms

Add 1 tsp butter and 1 tbsp oil and sauté for 5 min./120°C/speed 1. Add chopped porcini mushrooms and sauté for another 3 min./120°C/speed 1.

Prepare lentil mixture

Add cooked lentils, 40 g vegetarian grated cheese, 40 g delicate rolled oats, salt, pepper, 2 tbsp chopped parsley and 1 tbsp smoked paprika powder to the onions and mushrooms in the mixing bowl and mix for 15 sec./speed 4.

Form lentil balls

Form 12 balls from the lentil mixture and let them rest covered for about 15 minutes.

Prepare tomato sauce

20-30 min/212°F/Speed 2 212°F

Sauté the remaining onion (approx. 15g) in 2 tbsp oil until translucent. Add 1 tsp thyme, 150 ml mushroom water and 500 g strained tomatoes and simmer for 20-30 min./100°C/speed 2 until thickened. Season with salt and pepper.

Prepare and steam vegetables

10-15 min/248°F/Speed 1 248°F

Clean or peel 400 g rainbow carrots, 1 broccoli and 200 g white cabbage. Clean 100 g oyster mushrooms. Cut vegetables and oyster mushrooms into strips or slices. Add 1 tsp butter and 1 tbsp oil to the mixing bowl and steam for 10-15 min./120°C/speed 1. Add 150 g halved cherry tomatoes after 10 minutes.

Fry lentil balls

Fry the lentil balls in a separate pan in 4 tbsp oil for 8-10 minutes on all sides.

To Serve

Arrange the vegetables, tomato sauce and lentil balls on plates and garnish with 1 tsp thyme.
