Description

This crispy tart with fresh herbs and vegetables is a real spring delight! I love preparing it for a Sunday brunch or a light lunch. The base of grated potatoes and carrots, flavored with parmesan, brings a unique texture and a subtle taste. The mixture based on mascarpone and cream, enriched with chopped fresh herbs, is incredibly smooth. The preparation is a bit long, but the result is really worth it. You can even prepare the base in advance to save time. Serve it warm or cold, accompanied by a green salad for a complete and balanced meal. A real treat for the taste buds!

Ingredients (13 ingredients)

  • 600 g potatoes
  • 150 g carrots
  • 40 g grated parmesan
  • 30 g butter
  • 225 g mascarpone
  • 125 g whole liquid cream
  • 4 piece eggs
  • to taste flower of salt
  • to taste ras el-hanout
  • 1 bunch chives
  • 1 bunch parsley
  • 1 piece onion (small)
  • 90 g grated gruyere

Vegetable preparation

Peel the potatoes and carrots. Cut the vegetables into pieces and put them in the Thermomix bowl. Grate the potatoes and carrots for 5 Sek./Stufe 5. Transfer to a colander and let drain for 30 minutes to extract a maximum of juice.

Preparation of the crispy base

In a salad bowl, mix the grated potatoes and carrots with the grated parmesan and the melted butter. Line the bottom of a tart pan (21x25x4 cm) with parchment paper. Spread the potatoes and carrots by pressing well on the bottom and on the sides to make the preparation adhere.

Base cooking

Bake in a preheated oven at 180°C for 35 minutes. During this time, prepare the mixture.

Preparation of the mixture

Thermomix® Setting

Put the mascarpone, liquid cream, eggs, salt and ras el-hanout in the Thermomix bowl. Mix for 20 Sek./Stufe 4.

Adding the herbs and cheese

Thermomix® Setting
10 sec/Linkslauf Speed 2 Reverse

Add the chopped chives and parsley, the chopped onion and the grated gruyere in the Thermomix bowl. Mix gently for 10 Sek./Linkslauf Stufe 2.

Assembly and cooking of the quiche

Pour the mixture on the pre-baked base. Bake in a preheated oven at 180°C for 40 minutes.
