Description

These macarons with strawberries and balsamic are a true explosion of flavors! The sweetness of the almonds blends wonderfully with the acidity of the strawberries and the depth of the balsamic vinegar. An elegant and refined dessert, perfect for impressing your guests at a brunch or birthday. The preparation requires a little patience, but the result is really worth it. These macarons are a spring delight that will delight the taste buds of all gourmets. Feel free to prepare them in advance, they will be even better after a night in the refrigerator, the time for the flavors to mix harmoniously.

Ingredients (8 ingredients)

  • 150 g almond powder
  • 150 g icing sugar
  • 40 g caster sugar
  • 105 g egg whites
  • 200 g strawberries
  • 80 g sugar
  • 2 c à s preparation of balsamic vinegar flavored with fig
  • 2 g agar-agar

Preparation of powders

Sift together 150g of almond powder and 150g of icing sugar. Set aside.

Preparation of egg whites

Put a pinch of salt in 105g of egg whites. Insert the whisk. Whisk the egg whites in the Thermomix. As soon as the whites start to foam, add 20g of caster sugar and continue to beat. When the whites form a 'bird's beak', add the remaining 20g of sugar and slightly increase the speed. The whites must be firm and shiny.

Incorporation of powders

Remove the whisk. Add the almond powder/icing sugar mixture to the whipped whites in 2 or 3 times. Mix gently with a spatula.

Macaronnage

Macaron the preparation by folding the mixture from the bottom of the container over the top, until a smooth, shiny consistency is obtained that falls in a ribbon.

Dressing of the shells

Using a piping bag, form the shells on a baking sheet. Leave a space of about a finger between the shells.

Crusting

Let the shells crust for at least 30 minutes, until they are no longer sticky to the touch.

Cooking of the shells

Preheat the oven to 150°C. Bake the macarons for 10 to 15 minutes. Open the oven door 2 or 3 times during baking to evacuate moisture.

Preparation of the filling

Wash and cut 200g of strawberries into small pieces. Put the strawberries and 80g of sugar in the Thermomix bowl.

Cooking of the filling

Cook the strawberry and sugar mixture in the Thermomix. Add 2g of agar-agar 5 minutes before the end of cooking and 2 good tablespoons of preparation of balsamic vinegar flavored with fig 1 minute before the end.

Cooling of the filling

Set aside the filling in the refrigerator to set.

Assembly of the macarons

Spread a generous layer of filling on a shell and close with another shell. Wait a day or two before enjoying.
