Description

These rose and redcurrant macarons are a little marvel! I often prepare them for birthdays or special occasions. The rose ganache is delicate and fragrant, and the acidity of the redcurrants provides a perfect contrast. The preparation requires a little patience, especially for the crusting of the macarons, but the result is well worth it. A delight to share, which will impress your guests for sure! These macarons are perfect to accompany a tea or coffee.

Ingredients (10 ingredients)

  • 1 Grappe Redcurrant
  • 100 g White chocolate
  • 50 g Double cream
  • 1 c. à s. Rose water
  • Red food coloring
  • 37 g Water
  • 150 g Almond powder
  • 110 g Egg whites
  • 150 g Caster sugar or granulated sugar
  • 150 g Icing sugar

Preparation of the Italian meringue

Place 55g of egg whites in the Thermomix bowl. Insert the whisk. Program 3 Min./Stufe 3. Meanwhile, in a saucepan, pour 150g of caster sugar and 37g of water. Bring to a boil and let cook without stirring until the syrup reaches 118°C. Remove from heat and pour the syrup in a thin stream over the egg whites beaten to stiff peaks while whisking with the Thermomix, then continue to whisk for 10 Min./Stufe 3, until the machine has cooled.

Mixing the powders and egg whites

In a bowl, mix 150g of icing sugar with 150g of almond powder. Add the remaining egg white (55g) and mix well by hand.

Macaronnage and piping

Carefully mix the two preparations with a little red food coloring, using a maryse (flexible spatula), until the mixture becomes shiny and runny. Transfer the preparation into a piping bag fitted with a 10mm diameter nozzle and pipe the macarons onto a baking sheet covered with parchment paper or a silicone sheet. Tap the baking sheets to remove air bubbles and reserve at room temperature for at least 30 minutes (this is a very important part, the crusting!).

Baking the macarons

Preheat the oven to 150°C (th 5). Bake the sheet and cook for between 13 and 15 minutes depending on the size of your macarons. Let the macarons cool before removing them.

Preparation of the rose ganache

Thermomix® Setting
3 min/122°F/Speed 2 50

Melt 100g of white chocolate in the Thermomix bowl. Program 3 Min./50°C/Stufe 2. Meanwhile, in a saucepan, bring 50g of cream to a boil, then remove from heat and gradually incorporate the melted chocolate and 1 tbsp of rose water.
