Description

These oat flakes-nut-muffins are a wonderful start to the day or a delicious snack in between! I often bake them when I expect visitors or simply need something savory to go with coffee. The combination of oat flakes, nuts and cranberries makes them particularly juicy and aromatic. The banana and apple-banana puree give them a natural sweetness. They are quick to prepare and taste good both warm and cold. If you like, you can add chocolate chips. A great recipe that is well received by young and old!

Ingredients (14 ingredients)

  • 1 piece Banana
  • 100 g Apple-banana puree
  • 150 g Plain yogurt
  • 4 tbsp Honey
  • 1 Pck. Vanilla sugar
  • 50 ml Sunflower oil
  • 2 piece Eggs
  • 200 g Wheat flour Type 405
  • 1 Pck. Baking powder
  • 70 g delicate oat flakes
  • 1 tsp Cinnamon
  • 1 Prise(n) Salt
  • 60 g dried Cranberries
  • 50 g chopped Walnuts

Preparation (6 steps)

Prepare banana

Peel the banana and place in pieces in the mixing bowl.

Puree banana

Puree the banana for 10 sec./speed 5.

Add and mix liquid ingredients

20 sec/Speed 3

Add apple-banana puree, plain yogurt, honey, vanilla sugar, sunflower oil and eggs and stir for 20 sec./speed 3.

Mix and add dry ingredients

Add wheat flour, baking powder, 50 g delicate oat flakes, cinnamon and salt. Also add cranberries and chopped walnuts to the mixing bowl.

Prepare dough

Thermomix® Setting
30 sec/Speed 4

Mix everything for 30 sec./speed 4 to a smooth dough. If necessary, use the spatula to push down from the edge and mix again briefly.

Bake muffins

Fill the dough into greased muffin tins and bake in a preheated oven at 180 °C top/bottom heat for approx. 20-25 minutes. After 10 minutes of baking time, sprinkle with the remaining oat flakes and bake until done.
