Diese saftigen Lemon Blueberry Muffins sind ein absoluter Genuss! Ich backe sie besonders gerne am Wochenende für ein ausgiebiges Frühstück oder einen gemütlichen Brunch. Die Kombination aus frischen Blaubeeren und dem spritzigen Zitronenaroma ist einfach unschlagbar. Durch die Verwendung von Bananen und Apfelmus werden die Muffins besonders saftig und bleiben es auch. Sie sind super einfach und schnell zubereitet, sodass man auch spontan eine kleine Leckerei zaubern kann. Perfekt für Groß und Klein!

Ingredients (12 ingredients)

  • 2 piece medium ripe bananas, mashed
  • 0.75 cup packed brown sugar
  • 0.33333333333333 cup unsweetened applesauce
  • 1 piece large egg, lightly beaten
  • 1 tsp lemon extract
  • 1 cup whole wheat flour
  • 2 tsp baking powder
  • 1.25 tsp salt
  • 1 tsp ground ginger
  • 0.5 tsp baking soda
  • 1 cup quick-cooking oats
  • 1 cup fresh blueberries

Preparation (6 steps)

Preheat oven and prepare muffin tin

Preheat oven to 350 degrees F (175 degrees C). Lightly grease twelve 2 1/2-inch muffin cups. This step is done outside of the Thermomix.

Combine wet ingredients

Add 2 medium ripe bananas, mashed, ¾ cup packed brown sugar, ⅓ cup unsweetened applesauce, 1 large egg, lightly beaten, and 1 teaspoon lemon extract to the mixing bowl. Mix for 20 Sec./Stufe 3.

Combine dry ingredients

10 sec/Speed 3

Add 1 cup whole wheat flour, 2 teaspoons baking powder, 1 ¼ teaspoons salt, 1 teaspoon ground ginger, and ½ teaspoon baking soda to the mixing bowl. Mix for 10 Sec./Stufe 3.

Combine wet and dry ingredients

Add 1 cup quick-cooking oats to the mixing bowl. Mix for 10 Sec./Stufe 2/Linkslauf. Gently stir just until combined. Do not overmix.

Fold in blueberries

Add 1 cup fresh blueberries to the mixing bowl. Gently fold in with a spatula. This step is done outside of the Thermomix.

Bake the muffins

Spoon batter evenly into prepared muffin cups. Bake in the preheated oven until a toothpick inserted into the centers comes out clean, 15 to 20 minutes. Remove muffins from pan, transfer to a wire rack, and let cool completely. This step is done outside of the Thermomix.
