Description

These corn muffins with a liquid core of spicy Gruyère are a real eye-catcher on any buffet! I especially like to make them for birthdays or brunches because they are so easy to prepare and always go down well. The combination of the sweetish corn flour and the hearty cheese is simply irresistible. And the avocado cream? That's what makes the whole thing really special! It's creamy, slightly spicy and goes perfectly with the muffins. An absolute favorite recipe that I always enjoy preparing. Be sure to try it!

Ingredients (12 ingredients)

  • 190 g Flour
  • 210 g Corn flour
  • 5 g Baking powder
  • 2 g Salt
  • 400 ml Whole milk
  • 70 g Hazelnut butter
  • 2 piece Egg(s)
  • 60 g Gruyère
  • 6 piece Avocado(s)
  • 150 ml Liquid cream
  • 1 goutte Tabasco
  • 1 piece Yellow lemon(s)

Preparation (11 steps)

Mix dry ingredients

Add 190 g flour, 210 g corn flour, 5 g baking powder and 2 g salt to the mixing bowl and mix for 10 sec/speed 3.

Add and mix liquid ingredients

20 sec/Speed 4

Add 400 ml milk, 70 g nut butter and 2 eggs to the mixing bowl and mix for 20 sec/speed 4 until a smooth batter is formed. Then let the batter rest for 10 minutes.

Prepare muffin tins

Fill muffin tins (preferably non-stick) halfway with the batter.

Add Gruyère

Cut 60 g Gruyère into small cubes and place one cube in the center of each muffin tin.

Fill muffins completely

Cover the Gruyère cubes with the remaining batter so that the muffin tins are about ¾ full.

Bake muffins

Place the muffin tins on a baking sheet and bake in a preheated oven at 180°C (Th. 6) for about 20 minutes.

Let muffins cool

After baking, remove the muffins from the oven and let them cool slightly before removing them from the tins. Set aside.

Prepare avocado cream

Thermomix® Setting

Halve 6 avocados, pit and remove the flesh. Place the avocado flesh in the mixing bowl and puree for 15 sec/speed 6. Push down with the spatula.

Refine avocado cream

Thermomix® Setting
10 sec/Speed 3

Add the juice of 1 lemon, 150 ml cream and 1 drop of Tabasco to the mixing bowl and stir for 10 sec/speed 3.

Fill avocado cream into the siphon

Fill the avocado cream into a siphon, attach two gas cartridges and refrigerate until ready to use.

Decorate muffins

Decorate the cooled corn muffins with a beautiful rosette of avocado cream from the siphon and serve.
