Description

This mandarin cake creation is a true delight for all lovers of fruity cakes. The light sponge base, soaked with redcurrant jelly, harmonizes perfectly with the creamy cream filling and the juicy mandarins. I especially like to bake this cake for birthdays or at Christmas, as it not only tastes delicious, but is also a visual highlight. The chopped pistachios and the mandarin segments give the cake a festive touch. A cake dream that melts in your mouth!

Ingredients (13 ingredients)

  • 4 piece Eggs (size M)
  • 1 pinch Salt
  • 100 g Sugar
  • 1 abgeriebene Schale Lemon
  • 100 g Flour
  • 75 g Cornstarch
  • 2 tsp Baking powder
  • 2 Dose(n) Mandarin oranges (314 ml)
  • 150 g Redcurrant jelly
  • 3 container Whipping cream (à 250 g)
  • 2 Pck. Vanilla sugar
  • 2 Pck. Cream stiffener
  • 30 g Chopped pistachios

Preparation (10 steps)

Separate eggs and beat egg whites

Separate eggs. Place egg whites in the mixing bowl and whisk with a pinch of salt for 3 min./speed 4 with the butterfly attachment until stiff. Transfer and set aside.

Stir egg yolks, sugar and lemon zest

Thermomix® Setting
1 min/Speed 3

Add egg yolks, four tablespoons of water and 100 g of sugar to the mixing bowl and stir for 1 min./speed 3. Add grated zest of 1 lemon and stir for another 10 sec./speed 3.

Prepare flour mixture

Mix 100 g flour, 75 g cornstarch and 2 tsp baking powder in a separate bowl.

Fold in dry ingredients

Add the flour mixture to the egg yolk-sugar mixture and stir in for 15 sec./speed 2. Carefully fold in the previously beaten egg whites with a spatula.

Bake batter

Pour the batter into a springform pan (26 cm Ø) lined only on the bottom with baking paper and smooth it out. Bake in a preheated oven (electric stove: 175 °C/ gas: level 2) for about 25 minutes. Let cool on a wire rack.

Prepare base

2 min/122°F/Speed 2 50

Drain mandarin oranges. Cut the base twice horizontally. Put 150 g of redcurrant jelly into the mixing bowl and heat for 2 min./50°C/speed 2. Spread on the bottom layer. Place second layer on top.

Whip cream

Thermomix® Setting
2 min/Speed 3,5

Add 2 cartons of whipping cream, 2 packs of vanilla sugar and 2 packs of cream stiffener to the mixing bowl and whisk with the butterfly attachment for 2 min./speed 3.5 until stiff.

Mix cream with mandarins

Carefully fold the drained mandarin oranges, except for 12 for decoration, into the cream. Place on the second layer and smooth out.

Finish cake

1 min/Speed 3,5

Place the last cake layer on top. Add remaining cream (1 carton) to the mixing bowl and whisk with the butterfly attachment for 1 min./speed 3.5 until stiff. Spread 2/3 of the cream all around the cake. Fill the remaining third of the cream into a piping bag with a star nozzle and pipe tufts onto the cake.

Decorate cake

Sprinkle the edge and cream tufts with 30 g of chopped pistachios and decorate with remaining mandarin oranges.
