Description

This almond and rum cake is a simple and fragrant delight, perfect to accompany a coffee or tea. I often prepare it for Sunday brunch, and it always disappears in the blink of an eye! Almond powder gives it a soft texture and a subtle taste, while the brown rum brings a warm and delicious note. It is an easy cake to make with the Thermomix®, ideal for beginners in pastry. Feel free to add some orange zest for a touch of originality. A real treat for the taste buds!

Ingredients (8 ingredients)

  • 4 c. à s. brown rum
  • 1 pinch Vanilla powder
  • 1 poignée flaked almond
  • 3 piece eggs
  • 0.5 packet yeast
  • 125 g almond powder
  • 60 g potato starch
  • 125 g brown sugar

Preparation of flaked almonds

Thermomix® Setting
5 sec/Speed 5

A handful of flaked almonds in the bowl. Mix for 5 Sek./Stufe 5. Set aside.

Mixing the ingredients

30 sec/Speed 4

In the bowl, add 4 tbsp of brown rum, a pinch of vanilla powder, 3 eggs, ½ sachet of yeast, 125 g of almond powder, 60 g of potato starch and 125 g of brown sugar. Mix for 30 Sek./Stufe 4.

Incorporating the flaked almonds

Thermomix® Setting
10 sec/Linkslauf Speed 2 Reverse

Add the flaked almonds mixed previously. Mix gently for 10 Sek./Linkslauf Stufe 2.

Baking the cake

Pour the preparation into a greased and floured mold. Bake in a preheated oven at 180°C for 30 minutes.
