Description

This braised beef in red wine is a comforting and tasty dish, perfect for autumn or winter evenings. I often prepare it for big occasions, because it is always very appreciated. The meat, slowly simmered in red wine, becomes incredibly tender and melting. The addition of bacon, carrots and onions brings a richness of flavors that goes perfectly with the beef. This dish is ideal for a convivial meal with family or friends. It goes perfectly with steamed potatoes or mashed potatoes. A true delight!

Ingredients (13 ingredients)

  • 1.3 kg of beef
  • 75 cl of red wine
  • 170 g of bacon cut into bacon pieces
  • 0.5 c. à c. of thyme
  • 2 gousses of garlic
  • 2 c. à s. of flour
  • 1 c. à s. of tomato paste
  • 75 cl of beef stock
  • 1 c. à s. of olive oil
  • 1 piece onion
  • 1 piece carrot (big)
  • 1 c. à c. of salt or fine salt
  • 1 pinch of pepper

Preparation (6 steps)

Cook bacon pieces

Put 170 g of bacon cut into bacon pieces in the Mixtopf and pour 500 ml of water over it. Cook for 10 Min./100°C/Speed 1. Then drain and dry the bacon pieces.

Chop onion and carrot

Peel 1 onion and 1 large carrot and cut into coarse pieces. Put in the Mixtopf and chop for 5 Sec./Speed 5. Push down with the spatula.

Cook onion and carrot

Add 1 tbsp of olive oil and sauté for 3 Min./120°C/Speed 1.

Add beef

Cut 1.3 kg of beef into bite-sized pieces and pat dry with kitchen paper. Fry the meat in portions in a pan with some oil and then put it in the Mixtopf.

Add bacon pieces, spices and liquids

Put the fried bacon pieces, ½ tsp of thyme, 2 cloves of garlic, 2 tbsp of flour, 1 tbsp of tomato paste, 75 cl of red wine, 75 cl of beef stock, 1 tsp of salt and 1 pinch of pepper in the Mixtopf.

Braise beef

4 Stunden/203°F/Gentle stir speed/Linkslauf 95 Reverse

Close the Mixtopf and let it braise for 4 hours/95°C/Gentle stirring level/Reverse rotation.
