Description

This mascarpone-raspberry-cream is a delicious dessert that is easy to prepare with the Thermomix®. The combination of creamy mascarpone, fresh raspberries and crunchy Amaretti cookies makes it a perfect treat for special occasions. The recipe is designed for 8 servings and is ideal as a sweet end to a menu. The preparation time is about 60 minutes.

  • 8 EL Amaretti biscuits
  • 500 g Mascarpone
  • 400 g Cream
  • 100 g Sugar
  • 300 g Low-fat quark
  • 600 g Raspberries, deep-frozen
  • 100 g Icing sugar

Chop Amaretti biscuits

Add 8 tablespoons of Amaretti biscuits to the mixing bowl and chop for 5 sec./speed 5. Then remove the crumbled biscuits from the mixing bowl and set aside.

Prepare mascarpone cream

Thermomix® Setting
2 min/Speed 3,5

Add 500 g mascarpone, 400 g cream and 100 g sugar to the mixing bowl. Insert the butterfly and whisk for 2 min./speed 3.5 until a firm cream is formed. Use a spatula to scrape the mixture from the edge.

Stir in quark

Thermomix® Setting
20 sec/Speed 3

Add 300 g low-fat quark to the cream in the mixing bowl and stir in for 20 sec./speed 3. Remove the butterfly.

Cool cream

Transfer the mascarpone cream from the mixing bowl to a bowl and refrigerate for at least 30 minutes.

Prepare raspberry puree

30 sec/Speed 8

Let 200 g of the 600 g of deep-frozen raspberries thaw. Add the thawed raspberries together with 100 g icing sugar to the mixing bowl and puree for 30 sec./speed 8. If necessary, push down with the spatula and puree again.

Remove raspberry puree

Set aside 2 tablespoons of the raspberry puree and the remaining 400 g of deep-frozen raspberries for garnish.

Layer dessert

Divide the crumbled Amaretti biscuits on 8 dessert glasses. Alternately layer the cooled mascarpone cream and the raspberry puree into the glasses. Garnish with the remaining raspberry puree and the remaining raspberries.
