Description

This recipe for pork fillet medallions in bacon wrap with herb sauce is a hearty and festive main course, ideal for guests or special occasions. Ingredients (10 ingredients)

  • 600 g Pork fillet
  • 1 EL Mustard
  • 250 g Bacon slices
  • 1 EL Clarified butter
  • 200 g Cream cheese with herbs
  • 2 EL Tomato paste
  • 250 g Cream
  • 1 EL Herbs of Provence
  • nach Geschmack Salt
  • nach Geschmack Pepper

Preparation (6 steps)

Prepare pork fillet

Preheat the oven to 180 degrees Celsius circulating air. Remove fat and tendons from the pork fillet and cut into medallions about 2 cm thick. Season the medallions with salt and pepper and spread mustard on both sides.

Wrap medallions

Wrap each medallion with a slice of bacon and set aside.

Sear medallions

Heat the clarified butter in a pan and sear the medallions in it for about 1 minute per side. Then place the seared medallions in a baking dish.

Prepare sauce

Thermomix® Setting

Put cream cheese, tomato paste, cream, herbs of Provence, salt and pepper in the mixing bowl and mix for 20 sec./level 3.

Pour sauce over the meat

Pour the prepared sauce evenly over the medallions in the baking dish.

Bake casserole

Place the baking dish in the preheated oven and bake the medallions for about 20 minutes until the bacon is crispy and the meat is cooked.
