Description

These savory mini rolls with sausages are a hit at every party! I always like to make them because they are so easy to prepare and taste super delicious. The small rolls are fluffy and soft, the sausages are juicy and the gherkins add a fresh touch. With ketchup, mustard and roasted onions, every bite becomes a small taste experience. Ideal as finger food for birthdays, barbecues or just in between. The preparation takes some time, but it's definitely worth it! The rolls can also be prepared well in advance and topped just before serving.

Ingredients (13 ingredients)

  • 340 g Wheat flour Type 405
  • 1 tbsp Dry yeast
  • 2 tbsp Sugar
  • 1 tsp Salt
  • 70 ml Water
  • 25 g Butter
  • 90 ml Milk
  • 2 piece Eggs (size M)
  • 1 Glas Mini sausages
  • 5 tsp Ketchup
  • 5 tsp Mustard
  • 3 piece Gherkins
  • 5 tsp Roasted onions

Preparation (9 steps)

Mix dry ingredients

Add 340 g wheat flour type 405, 1 tablespoon dry yeast, 2 tablespoons sugar and 1 teaspoon salt to the mixing bowl and mix for 10 sec./speed 3.

Prepare liquid ingredients

3 min/122°F/Speed 2 50

Add 70 ml water, 25 g butter and 90 ml milk to the mixing bowl and heat for 3 min./50°C/speed 2. Then let the mixture cool down a little.

Knead dough

Thermomix® Setting
2 min/Kneading speed

Add the prepared liquid and 2 egg yolks (separate eggs, egg white is not needed) to the dry ingredients in the mixing bowl and knead for 2 min./kneading stage to form a smooth dough.

Let the dough rise

Form the dough into a ball, place in a bowl, cover with a cloth and let rise at room temperature for 2 hours until it has doubled in volume.

Shape rolls

Flour the work surface, then form 25 small, elongated rolls from the dough and place them on a baking sheet lined with baking paper.

Let the rolls rise again

Cover the baking sheet with a kitchen towel and let the dough rise for an hour until the volume has doubled again.

Bake rolls

Preheat the oven to 220 degrees top/bottom heat. Brush the rolls with a little milk and bake for approx. 5 minutes until golden brown. Then let cool completely.

Heat sausages

Heat the mini sausages in boiling water or in the microwave.

Top rolls

Cut the hot dog rolls lengthwise, but not all the way through. Spread 5 teaspoons of ketchup on the bottom halves and 5 teaspoons of mustard on the top halves. Cut 3 gherkins into slices. Then place a slice of gherkin on each of the bottom halves, place a sausage between the halves and sprinkle with 5 teaspoons of roasted onions. Fix with a wooden stick if necessary and serve warm.
