Description

These mini watermelon cakes are an explosion of color and flavor, perfect for a summer party or a birthday! The muffin batter, light and fluffy, is enriched with a touch of green food coloring that recalls the skin of the fruit. The cream, a delicious frosting made from cream, mascarpone and fresh cheese, is colored pink to imitate the juicy pulp of the watermelon. Chocolate chips complete the work, simulating the seeds. Preparing them is fun and the result is truly surprising! Ideal for a buffet or a special snack.

Ingredients (15 ingredients)

  • 2 piece eggs
  • 130 g sugar
  • 1 q.b. fine salt
  • 80 g milk
  • 100 g melted butter
  • 250 g flour
  • 0.5 packet baking powder
  • 1 q.b. green food coloring
  • 150 g fresh cream
  • 100 g icing sugar
  • 150 g mascarpone
  • 100 g creamy fresh cheese
  • 1 q.b. red food coloring
  • 1 q.b. orange food coloring
  • 1 q.b. chocolate drops

Preparation of the muffin batter

Put the eggs, sugar and a pinch of fine salt in the bowl. Whip for 3 Min./Stufe 4.

Adding milk and melted butter

Thermomix® Setting
20 sec/Speed 3

Add the milk and melted butter to the bowl. Mix for 20 Sek./Stufe 3.

Incorporating flour and baking powder

30 sec/Speed 4

Add the flour and baking powder to the bowl. Mix for 30 Sek./Stufe 4.

Coloring the dough

Thermomix® Setting
10 sec/Speed 3

Add the green food coloring to the bowl, adjusting the amount until you get the desired shade. Mix for 10 Sek./Stufe 3.

Baking the muffins

Divide the mixture into the cupcake liners inside the muffin tin. Bake in a preheated static oven at 180 °C for 25 minutes or in a ventilated oven at 170 °C for the same time. This step is not performed with the Thermomix.

Preparation of the frosting

In the clean bowl, add the fresh cream and icing sugar. Whip with the butterfly for 2 Min./Stufe 3.5.

Adding mascarpone and fresh cheese

Add the mascarpone and creamy fresh cheese to the bowl. Mix for 30 Sek./Stufe 3.

Coloring the frosting

Add the red and orange food coloring to the bowl, adjusting the amount until you get a bright pink color. Mix for 15 Sek./Stufe 3.

Decoration of the muffins

Transfer the frosting to a piping bag and decorate the muffins with tufts. Finish by decorating with chocolate chips. This step is not performed with the Thermomix.
