Description

Chicken mixiotes with cactus pads are a traditional Mexican dish that always reminds me of family parties. Ingredients (16 ingredients)

  • 1 kilogramo chicken cut into pieces
  • 1 piece ancho chili
  • 10 piece guajillo chilies
  • 1 piece morita chili (optional)
  • 1 pinch oregano
  • 1 pinch thyme
  • 0.5 tsp cumin
  • 3 piece allspice peppercorns
  • 2 hojas bay leaf
  • 2 piece cloves
  • 3 dientes garlic
  • 1 pinch salt to taste
  • 500 gramos cactus pads cut into strips
  • 1 cup onion cut into half moons (julienne)
  • 1 piece Aluminum foil sheets or sheet for mixiote
  • 3 tazas water

Preparation (8 steps)

Boil the chilies

Pour 3 cups of water into the Thermomix bowl. Add the ancho chili, the guajillo chilies and the morita chili (optional), all without seeds or stem. Program 10 Min./100°C/Stufe 1 so they soften.

Crush the chilies and spices

Thermomix® Setting
3 min/Speed 10

Add to the bowl the 3 cloves of garlic, the pinch of oregano, the pinch of thyme, the ½ teaspoon of cumin, the 3 allspice peppercorns, the 2 bay leaves and 2 cups of the chili cooking water. Crush 3 Min./Stufe 10.

Marinate the chicken

Pour the marinade into a container and marinate the chicken pieces. Make sure they are well covered. Let stand in the refrigerator for at least 1 hour, or preferably overnight for a more intense flavor.

Prepare the mixiotes

Spread a sheet of aluminum foil. Place a bed of cactus pads and onion cut into strips on the aluminum foil. Season with salt to taste.

Add the chicken and marinade

Place a piece of marinated chicken on the bed of cactus pads and onion. Add more marinade if desired. Season with a little more salt.

Wrap the mixiotes

Fold the ends of the aluminum foil inwards, first two of the sides and then the remaining two. Make sure the fold is facing up to avoid spills.

Steam

Thermomix® Setting
60 min/Varoma/Speed 1 Varoma

Place 1000 ml of water in the Thermomix bowl. Place the wrapped mixiotes in the Varoma. Steam for 60 Min./Varoma/Stufe 1.
