Description

These muffin burgers are a real eye-catcher at any party! The juicy muffins, topped with a creamy cream cheese lemon cream, fruity mango and crunchy chocolate florentines, are not only visually a highlight. The combination of sweet dough, sour cream and fruity mango is simply irresistible. I especially like to make these little delicacies in summer when there are fresh mangoes. The preparation is a little more complex, but the result is definitely worth it! Ideal for birthdays or a cozy brunch with friends.

Ingredients (19 ingredients)

  • 250 g Flour
  • 1 tsp Baking powder
  • 1 tsp Baking soda
  • 1 pinch Salt
  • 2 piece Eggs (size M)
  • 100 g Sugar
  • 2 Pck. Vanilla sugar
  • 150 ml Oil (e.g. sunflower oil)
  • 100 ml Orange lemonade
  • 100 g Powdered sugar
  • 2 tbsp Lemon juice
  • Splash of lemon juice
  • 2 tbsp Pearl sugar
  • 100 g Double cream cheese
  • 24 piece Mini chocolate florentines
  • 0.5 piece Mango
  • 3 Stiele Lemon balm
  • 1 tbsp Raspberry jam
  • 12 g Sticks with chocolate

Preparation (10 steps)

Mix dry ingredients

Thermomix® Setting
10 sec/Speed 4

Put 250 g flour, 1 tsp baking powder, 1 tsp baking soda and 1 pinch of salt into the mixing bowl and mix for 10 sec./speed 4. Transfer and set aside.

Beat eggs, sugar and vanilla sugar

2 min/Speed 4

Put 2 eggs, 100 g sugar and 1 packet of vanilla sugar into the mixing bowl and beat for 2 min./speed 4.

Add oil

Thermomix® Setting
30 sec/Speed 3

Slowly pour 150 ml oil into the mixing bowl with the knife running (speed 3). 30 sec./speed 3.

Stir in flour mixture and lemonade

Thermomix® Setting
20 sec/Speed 3

Add the flour mixture from step 1 and 100 ml orange lemonade to the mixing bowl and stir in for 20 sec./speed 3.

Bake muffins

Distribute baking cups in the wells of a muffin tin. Pour batter into the cups. Bake in a preheated oven (electric oven: 200 °C/convection oven: 180 °C) for 15–18 minutes. Let the muffins cool down. Remove from the molds and divide horizontally once.

Prepare icing

Put 100 g powdered sugar and 2 tbsp lemon juice in the mixing bowl and stir for 15 sec./speed 3.

Spread muffin tops and let dry

Spread the muffin tops with the icing and sprinkle with 2 tbsp pearl sugar. Let the icing dry.

Prepare cream cheese frosting

Thermomix® Setting
20 sec/Speed 3

Put 100 g double cream cheese, 1 packet of vanilla sugar and a few splashes of lemon juice in the mixing bowl and stir for 20 sec./speed 3.

Top muffins

Spread the lower muffin halves with the cream cheese cream. Distribute 24 mini chocolate florentines on top. Peel ½ mango, cut the pulp into thin strips. Wash 3–4 sprigs of lemon balm, pluck off the leaves. Spread some mango and balm on the cream. Stir 1–2 tbsp raspberry jam until smooth and add as a dab.

Assemble muffins

Put the muffin tops on top. Insert a chocolate stick (12 g) each to fix it.
