Description

These carrot muffins are a real comfort food, perfect for breakfast or a delicious snack. The grated carrot makes them incredibly soft and moist, while the lemon zest adds a touch of freshness that balances the sweetness. I often prepare them when I have guests at home and they always disappear in the blink of an eye! The recipe is very simple and quick, also ideal for those who don't have much experience in the kitchen. Try them, I'm sure you'll love them! They keep well for a few days, but I doubt they'll last that long.

Ingredients (8 ingredients)

  • 2 piece eggs
  • 150 g sugar
  • 100 ml seed oil
  • 1 piece lemons _the grated zest_
  • 200 g flour 00
  • 8 g baking powder
  • 250 g carrots
  • pearl sugar

Preparation (6 steps)

Eggs, sugar, oil and lemon zest in the bowl

Insert the eggs, sugar, seed oil and grated lemon zest into the bowl. Mix to combine the ingredients: 20 Sec./Stufe 4.

Adding flour and yeast

Add the flour and baking powder to the bowl. Mix until a smooth and lump-free mixture is obtained: 30 Sec./Stufe 4.

Incorporate the carrots

Thermomix® Setting
10 Sec./Speed 3/Linkslauf Reverse

Add the previously washed, dried and chopped carrots into the bowl. Mix gently: 10 Sec./Stufe 3/Linkslauf.

Preparation and filling of the molds

Line the muffin tins with paper liners. Pour about two scant tablespoons of batter into each paper liner, filling them no more than 2/3.

Decoration and baking

Decorate the surface of each muffin with pearl sugar. Bake in a preheated ventilated oven at 170°C for about 25 minutes.

Cooling and tasting

Remove the muffins from the oven, let them cool on a wire rack and enjoy.
