Description

These plum yogurt muffins are an absolute delight, especially in the fall when plums are in season! I have been making them for years and they are always a hit. The yogurt makes the muffins particularly juicy and the plums provide a fruity note. The preparation is very simple and goes with the Thermomix® in a flash. Ideal for a cozy weekend breakfast or as a sweet treat for afternoon coffee. If you like, you can add some cinnamon or almonds to the dough. Simply tastes delicious!

Ingredients (9 ingredients)

  • 500 g Plums
  • 250 g Flour
  • 0.5 Pck. Baking powder
  • 1 pinch Salt
  • 125 g Sugar
  • 2 piece Eggs (size M)
  • 75 ml Oil
  • 150 g Cream yogurt
  • 1 piece Juice and zest of 1 untreated orange

Preparation (6 steps)

Prepare plums

Wash, clean, quarter and pit 500 g plums. Set the prepared plums aside.

Mix dry ingredients

Put 250 g flour, ½ pack baking powder, 1 pinch of salt and 125 g sugar into the mixing bowl and mix for 10 sec/speed 4.

Add liquid ingredients

20 sec/Speed 3

Add 2 eggs (size M), 75 ml oil, 150 g cream yogurt, juice and zest of 1 untreated orange to the dry ingredients in the mixing bowl and stir for 20 sec/speed 3. The dough should not be too smooth.

Fold in plums

Carefully fold the prepared plums into the dough with a spatula.

Bake muffins

Place 2 paper liners in each cavity of a muffin tin (12 cavities). Fill the dough evenly into the molds. Bake in a preheated oven (electric oven: 175 °C/ convection oven: 150 °C/ gas: level 2) for 25-30 minutes until golden brown.

Let cool

Remove the finished muffins from the oven and let them cool on a wire rack.
