Description

These colorful dough muffins are a real eye-catcher on every cake buffet! I love baking them for children's birthdays or just when the sweet tooth calls. Thanks to the marble effect in the dough, they not only look great, but also taste wonderfully juicy. The preparation is super easy and quick with the Thermomix®. With the glaze and colorful sprinkles, they become small works of art. An absolute favorite recipe that is always well received by young and old!

Ingredients (11 ingredients)

  • 1 piece Organic Lemon
  • 175 g Butter (soft)
  • 130 g Sugar
  • 1 Pck. Vanilla sugar
  • 250 g Wheat flour Type 405
  • 3 tsp Baking powder
  • 130 ml Milk
  • 2 tbsp Cocoa powder
  • 200 g White Bourbon-Vanilla Cake Glaze
  • 5 tbsp Dark Cocoa Cream
  • 150 g Dark Cake Glaze

Preparation (11 steps)

Rub off lemon zest

Wash the lemon in hot water, dry it and rub off the peel with a zester. Set aside the grated lemon zest.

Whisk butter, sugar and vanilla sugar

Put the soft butter, sugar, vanilla sugar and a pinch of salt in the mixing bowl and whisk for 2 min./speed 4 until fluffy.

Stir in eggs

Add the eggs one after the other and stir in for 30 sec./speed 3 each time.

Mix flour and baking powder

Mix the flour and baking powder in a separate bowl.

Stir in flour mixture and milk

Add the flour mixture and 120 ml of milk alternately to the mixing bowl and stir in for 40 sec./speed 3. If necessary, use the spatula to scrape everything off the edge.

Divide the dough and add cocoa

Pour half of the dough into a separate bowl. Add the cocoa powder and 2 tbsp of milk to the remaining dough in the mixing bowl and mix for 20 sec./speed 3.

Fill and marble muffins

Line a muffin tin with 12 paper liners. Fill the liners alternately with light and dark dough. Marble carefully with a cake fork.

Bake muffins

Bake the muffins on a rack in a preheated oven at 180 °C top/bottom heat (200 °C convection oven) for approx. 20 minutes. Use a wooden skewer to check whether the dough is cooked through. Let the muffins cool down well.

Melt glaze

Put the white cake glaze in the mixing bowl and melt for 3 min./50°C/speed 2.

Heat cocoa cream

Thermomix® Setting
2 min/122°F/Speed 2 50

Put the dark cocoa cream in the mixing bowl and heat for 2 min./50°C/speed 2.

Decorate muffins

Spread the melted white cake glaze on 6 muffins and let them dry. Fill the warmed cocoa cream into a disposable piping bag, cut off the tip and spray the numbers 1 0 . 0 0 0 onto the muffins. Spread the melted dark cake glaze on the remaining muffins and decorate as desired.
