Description

This hearty beef goulash soup from the Thermomix® warms you up on cold days. The main ingredients are beef broth, beef goulash, onions, potatoes and carrots. Preparation in the Thermomix® takes about 75 minutes and yields 6 servings. Ideal as a hearty main course for the whole family.

Ingredients (19 ingredients)

  • 1.2 Liter Beef broth
  • 500 g Beef goulash
  • 300 g Onions
  • 300 g Potatoes, predominantly waxy
  • 150 g Carrots
  • 2 Stück Red bell peppers
  • 1 Zehe Garlic
  • 50 g Clarified butter
  • 3 EL Tomato paste
  • 2 EL Sweet paprika powder
  • 1 TL Sugar
  • 0.5 TL Ground pepper
  • 0.5 TL Marjoram
  • 0.25 TL Caraway seeds, whole
  • 2 Stück Bay leaves
  • 1 Spritzer Lemon juice
  • 1 Bund Parsley, fresh
  • 1 Prise Salt
  • 1 Prise Cayenne pepper

Preparation (9 steps)

Prepare onions, peppers and garlic

Thermomix® Setting

Peel 300 g onions, halve and place in the mixing bowl. Chop for 3 sec./speed 5. Wash, core and dice 2 red bell peppers. Peel 1 clove of garlic and dice finely.

Prepare beef

Cut 500 g beef goulash into approx. 1.5 cm cubes and lightly salt.

Sear beef

Heat 50 g clarified butter in a pan and sear 500 g beef goulash in two portions until browned. Remove meat from pan and set aside.

Sauté onions, peppers and garlic

Thermomix® Setting
3 min/248°F/Speed 1 120

Add the chopped onions, diced peppers and diced garlic together with 1 tsp sugar and 3 tbsp tomato paste to the mixing bowl and sauté for 3 min./120°C/speed 1. Use a spatula to scrape everything from the edge.

Deglaze and add meat

Briefly stir in 2 tbsp sweet paprika powder, then deglaze with 1.2 liters beef broth and scrape the bottom of the pot with a spatula to loosen any browned bits. Add the seared beef goulash with meat juices, 2 bay leaves and 1/2 tsp ground pepper.

Simmer goulash soup

35 min/212°F/Speed 1 100 Reverse

Let the goulash soup simmer for 35 min./100°C/speed 1 in reverse rotation.

Prepare potatoes and carrots

Meanwhile, peel 300 g potatoes and cut into approx. 1.5 cm cubes. Peel 150 g carrots and slice.

Add vegetables and finish simmering

25 min/212°F/Speed 1 100 Reverse

After 35 minutes, add the potato cubes, carrot slices, ½ tsp marjoram and 1/4 tsp caraway to the goulash soup and simmer for another 25 min./100°C/speed 1 in reverse rotation.

Season and Serve

Season the goulash soup with salt, pepper, 1 dash of lemon juice and cayenne pepper to taste. Garnish with fresh parsley and serve.
