Description

This oriental nut pull-apart cake is an absolute highlight on every coffee table! I especially like to bake it at Christmas time, but of course it tastes good all year round. The combination of a loose yeast dough and an aromatic nut filling with honey is simply irresistible. The preparation is a bit more complex, but the result is worth it. The different nuts such as almonds, hazelnuts and pistachios give the cake a great texture and a unique taste. A touch of honey rounds everything off perfectly. Try it, you will be thrilled!

Ingredients (14 ingredients)

  • 450 g Flour
  • 105 g Sugar
  • 1 Pck. Vanilla sugar
  • 1 Pck. Dry yeast
  • 0.5 tsp Salt
  • 175 g Soft butter
  • 75 ml Milk
  • 2 piece Eggs (size M)
  • 100 g Slivered almonds
  • 100 g Hazelnuts
  • 50 g Pistachios
  • 70 g Honey
  • Flour for the work surface
  • Fat for the mold

Preparation (8 steps)

Prepare yeast dough

Thermomix® Setting
10 sec/Speed 4

Add 400 g flour, 50 g sugar, vanilla sugar, dry yeast and ½ tsp salt to the mixing bowl and mix for 10 sec/speed 4. Melt 60 g butter in a separate saucepan. Add 75 ml milk and 50 ml water and heat (do not boil!).

Add liquid ingredients and knead dough

Add the melted butter, milk-water mixture and 2 eggs (size M) to the flour in the mixing bowl and knead for 2 min/kneading stage to form a smooth dough. Transfer the dough to a bowl, cover and let rise in a warm place for approx. 1 hour.

Chop nuts

5 sec/Speed 5

Add 100 g slivered almonds, 100 g hazelnuts and 50 g pistachios to the mixing bowl and chop for 5 sec/speed 5. Set aside 2 tablespoons of the nut mixture.

Prepare nut mixture

Put the remaining nut mixture, 50 g honey and 2 tablespoons of sugar in a bowl and mix.

Roll out and top the dough

Briefly knead the dough again and roll it out into a square (approx. 50 cm) on a floured work surface. Spread with 80 g butter. Cut into 6 strips (approx. 8 cm each) with a rolling knife. Spread the nut mixture on top. Cut each dough strip crosswise into 5 pieces (approx. 8 x 10 cm).

Shape cake

Place a greased loaf pan (approx. 30 cm long) upright. Fold the pieces of dough together, stretch them a little in length and width and layer them one after the other in the mold so that the openings alternately face forward and backward. If the mold is not completely full at the end, tilt the mold and distribute the pieces of dough so that it is filled. Cover and let rise again for approx. 15 minutes.

Prepare streusel

20 sec/Speed 4

Put 50 g flour, 35 g sugar, 35 g butter and 2 tablespoons of nut mixture into the mixing bowl and process into streusel for 20 sec/speed 4.

Distribute streusel and bake

Spread the streusel on the dough. Bake the cake in a preheated oven (electric oven: 180 °C/fan oven: 160 °C) for approx. 30 minutes. Remove, let rest for approx. 20 minutes. Turn out of the mold and let cool. Drizzle with approx. 2 tablespoons of honey before serving.
