Description

The Original Sacher Torte is a classic chocolate torte recipe, filled with apricot jam and covered with a shiny chocolate glaze. This recipe is optimized for the Thermomix® and allows for easy preparation. The torte is ideal for festive occasions and birthdays. With a preparation time of about 2 hours and 12 servings, it is perfect for larger groups.

Ingredients (10 ingredients)

  • 200 g Bittersweet chocolate
  • 60 g Butter
  • 8 Stück Eggs
  • 140 g Powdered sugar
  • 1 Prise Salt
  • 140 g Flour
  • 60 g Ground almonds
  • 200 g Apricot jam
  • 200 g Bittersweet chocolate
  • 20 g Cocoa butter

Preparation (10 steps)

Melt chocolate

Break 200 g bittersweet chocolate into pieces and place in the mixing bowl. Chop 10 sec./level 8. Then add 60 g butter and melt 3 min./50°C/level 2.

Stir eggs, sugar and salt

Put 8 eggs and 140 g powdered sugar and 1 pinch of salt in the mixing bowl and stir 3 min./level 4. Insert the butterfly.

Stir in chocolate mixture

Add the melted chocolate-butter mixture from step 1 to the egg-sugar mixture in the mixing bowl and stir in 30 sec./level 3. Remove butterfly.

Mix and fold in flour and almonds

Put 140 g flour and 60 g ground almonds in the mixing bowl and fold in 30 sec./level 3.

Bake dough

Pour the dough into a greased and floured springform pan (20 cm diameter) and bake in a preheated oven at 170°C top/bottom heat for approx. 50 minutes. Do a stick test.

Cool and cut torte

After baking, remove the torte from the oven and let it cool completely. Then cut horizontally into two layers.

Heat jam

Put 200 g apricot jam in the mixing bowl and heat 3 min./60°C/level 2.

Fill and spread torte

Spread half of the heated apricot jam on the bottom torte layer. Place the second layer on top and spread the remaining jam all around the torte.

Prepare glaze

Break 200 g bittersweet chocolate and 20 g cocoa butter into pieces and place in the mixing bowl. Melt 3 min./50°C/level 2.

Glaze torte

Pour the liquid glaze over the torte and spread evenly. Let dry.
