Description

This Peruvian-style roasted chicken is an explosion of flavors. The marinade, with its spicy and aromatic touch, penetrates deeply into the meat, leaving it juicy and full of flavor. The mixture of cumin, ají panca, oregano, ground garlic, and rosemary, along with dark beer and soy sauce, creates a unique combination that will transport you directly to Peru. Ideal for a family meal or a special celebration. The preparation is simple, but it requires time for the chicken to marinate properly. Ingredients (12 ingredients)

  • 1 piece Free-range chicken, whole
  • 1 tbsp Cumin
  • 1 tbsp Ají panca
  • 1 tbsp Oregano
  • 1 tbsp Ground garlic
  • 1 tbsp Rosemary
  • 1 pinch Herbes de Provence
  • 2 tbsp Salt
  • 0.5 container Dark beer
  • 3 tbsp Vinegar
  • 1 tsp Ground black pepper
  • 2 tbsp Soy sauce

Preparation (5 steps)

Chicken preparation

With kitchen scissors, open the chicken by cutting through the center of the breast. Then, flatten it a little to give it a flat shape, more comfortable for roasting. Set aside.

Marinade preparation

In the Thermomix bowl, add 1 tablespoon of cumin, 1 tablespoon of ají panca, 1 tablespoon of oregano, 1 tablespoon of ground garlic, 1 tablespoon of rosemary, Herbes de Provence to taste, 2 tablespoons of salt, half a glass of dark beer, 3 tablespoons of vinegar, 1 teaspoon of ground black pepper and 2 tablespoons of soy sauce. Mix 20 sec./Speed 5.

Chicken marinade

Spread the chicken well with the marinade on both sides. Separate the skin from the meat of the chicken and insert a little of the marinade inside. Leave the chicken well spread in the fridge for 12 hours so that the flavor penetrates well.

Chicken roasting

Preheat the oven to 200°C. Place the chicken on a baking sheet. Bake for 1 hour and 30 minutes, or until golden brown on both sides and the inside is cooked. Turn the chicken every 15 minutes to ensure even cooking.

Presentation

Bring the chicken to the table on a platter accompanied by fried potatoes and decorated with a few sprigs of coriander or parsley to refresh.
