Description

This beef stir-fry with pointed cabbage is a quick and easy main course that can be prepared in just 35 minutes. The recipe is designed for 2 servings and is ideal for a quick lunch or dinner. The dish is rich in vegetables and protein and can be served with whole grain basmati rice.

Ingredients (16 ingredients)

  • 300 g Beef sirloin steaks
  • 300 g Pointed cabbage
  • 100 g Radicchio
  • 1 Stück Red and yellow bell peppers
  • 1 Stück Red chili pepper
  • 1 Stück Garlic clove
  • 15 g Ginger
  • 200 ml Vegetable broth
  • 2 EL Soy sauce
  • 1 TL Toasted sesame oil
  • 0.5 TL Locust bean gum
  • 4 EL Light sesame oil
  • Salt
  • Pepper from the mill
  • 0.5 Bund Chives
  • 1 EL Sesame seeds

Preparation of the ingredients

Wash the meat, pat dry and cut into strips. Clean the pointed cabbage and radicchio, wash and remove the stalk. Cut both into strips about 1 cm wide. Halve the peppers lengthwise, core, wash and cut into fine strips. Halve the chili pepper lengthwise, core and wash. Peel the garlic and ginger. Cut everything into fine cubes.

Preparation of the broth

Put 200 ml vegetable broth, 2 tbsp soy sauce, 1 tsp toasted sesame oil and 0.5 tsp locust bean gum into the mixing bowl and stir for 10 sec/level 3.

Fry the meat

Fry 300 g of beef sirloin steaks in a separate pan with 2 tbsp of light sesame oil over high heat for 2 to 3 minutes, turning occasionally. Season with salt and pepper and remove.

Sauté the vegetables

Put the remaining 2 tbsp of light sesame oil into the mixing bowl and add the peppers, 300 g pointed cabbage, 100 g radicchio, 1 red chili pepper, 1 clove of garlic and 15 g ginger and sauté for 2 min/Varoma/level 1.

Add the sauce and bring to a boil

Add the prepared seasoning sauce to the mixing bowl and bring to the boil for 5 min/100°C/level 2.

Add meat and chives

Add the fried meat to the vegetables in the mixing bowl and heat again for 2 min/100°C/level 1. Season to taste with remaining soy sauce, salt and pepper. Wash 0.5 bunch of chives, shake dry and cut into fine rolls.

Serving

Arrange the stir-fry and sprinkle with chives and 1 tbsp sesame seeds. Whole grain basmati rice goes well with this.
