Description

Dieses Gericht ist ein echter Allrounder! Die Kombination aus würzigen Linsen, Spinat und perfekt pochierten Eiern ist einfach unschlagbar. Ich mache es gerne, wenn es schnell gehen muss, aber trotzdem etwas Gesundes und Herzhaftes auf den Tisch soll. Die rote Linsen machen das Gericht schön sämig und die Gewürze sorgen für eine angenehme Schärfe. Perfekt für ein gemütliches Wochenende oder als sättigendes Mittagessen. Lässt sich auch super vorbereiten und mit zur Arbeit nehmen. Ein absolutes Lieblingsrezept, das bei mir immer gut ankommt!

Ingredients (12 ingredients)

  • 1 tbsp olive oil
  • 2 piece onions
  • 4 clove garlic cloves
  • 1.5 tbsp smoked paprika
  • 500 g passata
  • 500 ml vegetable stock
  • 150 g red lentils
  • 400 g frozen spinach
  • 400 g can borlotti beans
  • 10 g basil
  • 2 piece tomatoes
  • 8 piece eggs

Preparation (7 steps)

Onions and garlic preparation

Thermomix® Setting
3 sec/Speed 5, 3 sec/Speed 7

Peel the onions and garlic. Cut the onions into quarters. Add the onions to the mixing bowl and chop for 3 Sec./Stufe 5. Add the garlic and chop for 3 Sec./Stufe 7.

Sauté onions and garlic

Thermomix® Setting

Add the olive oil and smoked paprika to the mixing bowl and sauté for 3 Min./120°C/Stufe 1.

Add passata, stock, lentils and spinach

Thermomix® Setting
25 min/212°F/Speed 1 100

Add the passata, vegetable stock, red lentils, and frozen spinach to the mixing bowl. Cook for 25 Min./100°C/Stufe 1.

Add beans, basil and tomatoes

Thermomix® Setting
5 min/212°F/Speed 1/Linkslauf 100 Reverse

Add the borlotti beans (with the liquid from the can), basil, and tomatoes to the mixing bowl. Stir with the spatula to combine. Cook for 5 Min./100°C/Stufe 1/Linkslauf.

Create wells for eggs

Transfer the mixture to a large pan. Make four gaps in the mixture using a spoon.

Cook the eggs

Crack one of the eggs into each gap. Cover and cook over a low heat for 5 mins until the eggs are just set.

Serve

Serve half the lentil mixture with the four cooked eggs.
