Description

This Algerian semolina loaf, known as Khobz el Dar, is a delightful bread with a slightly sweet and nutty flavor. The combination of semolina and all-purpose flour gives it a unique texture, while the sesame seeds add a lovely crunch. I've been experimenting with different bread recipes lately, and this one has quickly become a favorite. It's perfect for breakfast with a smear of butter or as a side to a hearty stew. The aroma while it bakes is simply divine! The recipe requires some resting time for the dough, but the result is well worth the wait. Enjoy this taste of Algeria in your own kitchen!

Ingredients (13 ingredients)

  • 0.5 cup semolina flour
  • 2 tablespoons semolina flour
  • 3 tablespoons sesame seeds, divided
  • 1 tablespoon white sugar
  • 1 teaspoon active dry yeast
  • 0.75 teaspoon salt
  • 0.25 cup vegetable oil
  • 1 piece egg
  • 1 piece egg, separated
  • 1 cup lukewarm milk
  • 2.75 cups all-purpose flour
  • 2 tablespoons all-purpose flour, or more as needed
  • 1 teaspoon water

Combine dry ingredients

Add ½ cup semolina flour, 2 tablespoons semolina flour, 2 tablespoons sesame seeds, 1 tablespoon sugar, 1 teaspoon active dry yeast, and ¾ teaspoon salt to the mixing bowl. Mix for 10 Sec./Stufe 3 to combine.

Add wet ingredients and mix

Add ¼ cup vegetable oil, 1 egg, and the egg white (separated from the other egg) to the mixing bowl. Slowly pour in 1 cup lukewarm milk while mixing for 20 Sek./Stufe 3 until a liquid dough forms.

First rise

Cover the mixing bowl with a plate or plastic wrap and let it stand at room temperature until frothy, about 1 hour.

Add flour and mix

Add 2 ¾ cups all-purpose flour to the mixing bowl. Mix with the dough hook setting for 2 Min./Knetstufe until a sticky dough forms.

Second rise

Cover the mixing bowl again and allow the dough to rest for 30 minutes.

Shape the loaf

Line a baking sheet with parchment paper or a baking mat. Sprinkle 1 tablespoon flour over the dough and your hands. Mix the dough in the mixing bowl, adding flour as needed, 1 tablespoon at a time, until it pulls away from the sides of the bowl. Shape the dough into a round loaf and place it on the prepared baking sheet.

Final rise

Cover the loaf loosely with a towel and let it rise for 1 hour in a warm place until the loaf doubles in volume.

Prepare egg wash

Beat the egg yolk (reserved from separating the egg) and 1 teaspoon water in a bowl with a fork. Brush the egg wash over the entire surface of the loaf.

Add sesame seeds

Sprinkle the remaining 1 tablespoon sesame seeds on top of the loaf.

Bake the bread

Preheat oven to 400 degrees F (200 degrees C). Bake in the preheated oven until the loaf is golden brown, about 20 to 25 minutes.
