Dieses Zitronen-Blaubeer-Brot ist ein absoluter Genuss! Ich backe es besonders gerne im Frühling, wenn die Blaubeeren Saison haben. Die Kombination aus der frischen Zitrone und den süßen Blaubeeren ist einfach unschlagbar. Durch die Hanfsamen bekommt das Brot eine tolle Textur und einen nussigen Geschmack. Es ist super einfach zuzubereiten und schmeckt sowohl warm als auch kalt. Perfekt für ein gemütliches Frühstück oder als süßer Snack zwischendurch. Das Rezept ist vegetarisch und lässt sich gut vorbereiten.

Ingredients (12 ingredients)

  • 0.5 cup orange juice
  • 0.5 cup milk
  • 1 piece medium lemon, chopped and seeded
  • 1 piece egg
  • 2 tbsp vegetable oil
  • 1 tsp vanilla extract
  • 1.5 cup all-purpose flour
  • 1 cup white sugar
  • 0.75 cup hemp hearts
  • 0.66666666666667 cup blueberries, or more to taste
  • 1.25 tsp baking soda
  • 0.5 tsp salt

Orange juice, milk, lemon, egg, oil, and vanilla extract blend

Add ½ cup orange juice, ½ cup milk, 1 medium lemon (chopped and seeded), 1 egg, 2 tablespoons vegetable oil, and 1 teaspoon vanilla extract to the mixing bowl. Mix for 20 Sec./Stufe 5 until smooth.

Mix dry ingredients

Add 1 ½ cups all-purpose flour, 1 cup white sugar, ¾ cup hemp hearts, ⅔ cup blueberries, 1 ¼ teaspoons baking soda, and ½ teaspoons salt to the mixing bowl. Mix for 15 Sek./Stufe 3 until combined.

Combine wet and dry ingredients

Pour the orange juice mixture into the mixing bowl with the dry ingredients. Mix for 10 Sek./Stufe 2. Do not overmix.

Bake the loaf

Preheat the oven to 350 degrees F (175 degrees C). Line a 9x4-inch loaf pan with parchment paper. Pour batter into the prepared loaf pan. Bake in the preheated oven until a toothpick inserted into the loaf comes out clean, 55 to 60 minutes. Let cool for 5 minutes before removing from pan.
