Description

This gluten-free buckwheat bread is a delicious alternative for anyone who needs to avoid gluten. Buckwheat, rice and flaxseed flour and starch are used to bake a hearty bread. Preparation takes about 2 hours and 5 minutes, including resting time. The recipe yields approximately 15 slices and is perfect for breakfast or as a side dish.

Ingredients (10 ingredients)

  • 12 g Yeast
  • 450 ml Water
  • 25 g Psyllium seed husks
  • 1 tsp Honey
  • 125 g Whole buckwheat flour
  • 100 g Whole rice flour
  • 50 g Flaxseed flour
  • 100 g Starch
  • 1 tsp Bread spice
  • 10 g Salt

Activate yeast

Put 12 g yeast, 450 ml lukewarm water, 25 g psyllium seed husks and 1 tsp honey into the mixing bowl and stir for 5 min./speed 2 and let swell.

Prepare dough

Put 125 g whole buckwheat flour, 100 g whole rice flour, 50 g flaxseed flour, 100 g starch and 1 tsp bread spice and 10 g salt into the mixing bowl and knead for 3 min./kneading stage to a smooth dough.

Let the dough rise

Cover the dough and let it rise at room temperature for about 1 hour.

Shape and let the dough rise

Dust a proving basket with some starch. Put some whole buckwheat flour and starch on the work surface and briefly knead the dough on it once with your hands. Then form the dough into a round loaf, dust thinly with starch and place in the proving basket. Cover the loaf and let it rise for another 45 minutes.

Preheat oven

Preheat the oven to 240 degrees top and bottom heat and place a metal bowl filled with water at the bottom of the oven. Line a baking sheet with baking paper.

Bake bread

Turn the bread out of the proving basket onto the baking sheet and bake for 20 minutes at 240°C. Then briefly open the oven door and let the steam escape. Reduce the oven temperature to 200 degrees and bake the bread for another 30 minutes.

Finish baking bread

Reduce the temperature to 200°C and bake for another 30 minutes.

Let the bread rest

Turn off the oven. Let the bread rest in the oven with the door open for 10 minutes. Then remove and let cool on a wire rack.
