  • 1 piece Water, cold
  • 200 g White flour (wheat flour type 550)
  • 400 g Crystal sugar
  • 20 g Butter
  • 30 g Egg
  • 1 piece Sourdough
  • 100 g Butter
  • 1 piece Salt
  • 1 piece White flour (wheat flour type 550)
  • 40 g Water
  • 12 g Salz
  • 250 g Weissmehl (Weizenmehl Type 550)
  • 120 g Wasser

Preparation (10 steps)

Prepare preferment

Thermomix® Setting

Put 200 g cold water, 400 g wheat flour (wheat flour type 550), 20-40 g crystal sugar, 30 g butter and 1 egg into the mixing bowl and knead for 2 min./kneading level to form a dough.

Let the preferment rise

Shape the preferment into a ball, place in a bowl and cover and let ferment at room temperature for 12-18 hours. The volume should double - or even triple.

Prepare main dough

10-12 min/Kneading speed

Place the preferment, 40 g butter, 12 g salt, 250 g wheat flour (wheat flour type 550) and 120 g water (recommendation: keep 10-20% of the water back and only add it gradually if necessary) in the mixing bowl and knead on a low setting for 2-3 min./kneading level. Then increase the kneading speed and knead the dough for a total of 10-12 min./kneading level.

Let the dough rest

Place the dough in a bowl, cover and let rest at room temperature for 1 hour.

Portion and shape the dough

After the proofing time, place the dough on a floured work surface and divide into four equal pieces. Shape each piece of dough into an even ball.

Prepare the tin and place the dough pieces

Grease a toast bread tin well and don't forget the lid. Then place the dough pieces in the toast bread tin and press down well so that the dough is also pressed into the corners.

Let the dough pieces rise

The tin is about 1/3 full. Let the dough pieces stand at room temperature for 3-4 hours.

Preheat oven

Preheat the oven to 250 degrees top and bottom heat.

Bake bread

After the proofing, close the tin (fix the lid depending on the tin) and slide it into the center of the preheated oven. Reduce the baking temperature to 210 degrees and bake the toast bread for about 50-60 minutes.

Let the bread cool

After baking, remove the toast bread from the tin and let it cool on a wire rack. Tip: If the sides are still a little light, you can bake the toast bread again without the tin for 5-10 minutes.
