Description

These spiced raisin buns are a delightful treat, perfect for Easter brunch or a cozy breakfast. The warm spices like cinnamon, allspice, cloves, and nutmeg create a comforting aroma and flavor. I've been making these for years, and they always disappear quickly! The addition of orange marmalade adds a subtle citrus note that complements the raisins beautifully.   • 180 ml lukewarm milk, divided
  • 7 g active dry yeast
  • 1 tsp white sugar
  • 375 g all-purpose flour, divided
  • 50 g white sugar
  • 1 tsp salt
  • 0.5 tsp ground cinnamon
  • 0.5 tsp ground allspice
  • 0.25 tsp ground cloves
  • 0.25 tsp ground nutmeg
  • 57 g softened butter
  • 2 piece large eggs
  • 113 g golden raisins, chopped
  • 2 tbsp orange marmalade
  • 1 piece egg white
  • 1 tbsp milk
  • 40 g confectioners' sugar
  • 7.5 ml milk

Activate the Yeast

Pour 60 ml lukewarm milk, 7 g active dry yeast, and 1 tsp white sugar into the mixing bowl. Mix for 5 Sec./Stufe 3. Let stand until foamy, about 5 minutes.

Combine Dry Ingredients

Add 375 g all-purpose flour, 50 g white sugar, 1 tsp salt, 1/2 tsp ground cinnamon, 1/2 tsp ground allspice, 1/4 tsp ground cloves, and 1/4 tsp ground nutmeg to the mixing bowl. Mix for 10 Sek./Stufe 4.

Incorporate Wet Ingredients and Raisins

Add the yeast mixture, 120 ml milk, 57 g softened butter, and 2 large eggs to the mixing bowl. Mix for 30 Sek./Stufe 3. Add 113 g chopped golden raisins and 2 tbsp orange marmalade. Mix for 10 Sek./Linkslauf Stufe 2.

Knead the Dough

Sprinkle remaining 30 g flour onto a work surface. Turn dough onto the surface and knead, incorporating additional flour as needed, until tacky but not sticking to fingers, about 10 minutes. Form dough into a ball. This step is done outside of the Thermomix.

First Rise

Place dough in a large, lightly-oiled bowl and turn to coat. Cover bowl with a clean towel and let dough rise in a warm place until doubled in volume, about 2 hours. This step is done outside of the Thermomix.

Shape the Buns

Deflate dough; divide into 16 equal pieces and form into round buns. Place buns 1 1/2 inches apart on lightly greased baking sheets; cover with a light cloth and let rise until doubled in volume, about 40 minutes. This step is done outside of the Thermomix.

Preheat Oven

Preheat oven to 400 degrees F (200 degrees C). This step is done outside of the Thermomix.

Prepare Egg Wash

Whisk 1 egg white and 1 tbsp milk together in a small bowl. This step is done outside of the Thermomix.

Score and Brush Buns

Use a sharp knife to score a deep cross on top of each bun; brush buns with egg wash. This step is done outside of the Thermomix.

Bake the Buns

Bake in the preheated oven until lightly browned, about 12 minutes. Remove to cool completely on a wire rack, about 15 minutes. This step is done outside of the Thermomix.

Prepare Icing

Place 40 g confectioners' sugar and 7.5 ml milk in a plastic sandwich bag; knead the bag until combined. This step is done outside of the Thermomix.

Pipe Icing

Snip off one corner of the bag; pipe a cross into the scored lines on each bun. This step is done outside of the Thermomix.
