Description

These chicken panini with arrabbiata sauce are perfect for a quick lunch or a tasty snack. The spicy sauce, prepared with fresh tomatoes and chili pepper, goes perfectly with the grilled chicken and the crunchy cabbage. I often prepare them for a picnic in the park or for an informal dinner with friends. The preparation is simple and quick, and the result is a tasty and satisfying sandwich. If you don't like spicy food, you can reduce the amount of chili pepper or omit it altogether. Try them, they are a real treat!

Ingredients (14 ingredients)

  • Chicken breast
  • Baguette
  • 1 clove Garlic
  • Hot red chili pepper
  • Peeled tomato
  • to taste White wine vinegar
  • to taste Sugar
  • 1 piece Red bell pepper
  • 1 piece Yellow bell pepper
  • Purple cabbage
  • White cabbage
  • to taste Extra virgin olive oil
  • to taste Salt
  • to taste Black pepper

Preparation (8 steps)

Preparation of the chicken breast

Remove any small bones, fat and waste from the chicken breast. Slice the chicken breast not too thinly.

Cooking the chicken breast

Heat a grill. Grill the chicken slices for about 3 minutes on one side and 2 minutes on the other. Season each side with salt, pepper and extra virgin olive oil. Set aside the cooked chicken.

Toasting the baguette

Open the baguettes in half lengthwise. Toast the baguettes on the same grill for about 1 minute, until lightly golden.

Preparation of the spicy sauce

Thermomix® Setting

Put the clove of garlic in the bowl and chop: 3 Sec./Stufe 7. Add the extra virgin olive oil and the chopped chili pepper with all the seeds and sauté: 3 Min./120°C/Stufe 1.

Cooking the sauce

Thermomix® Setting
10 min/212°F/Speed 1 100

Add the peeled tomato, white wine vinegar, salt and sugar to the bowl. Cook: 10 Min./100°C/Stufe 1.

Blending the sauce

Blend the sauce: 20 Sec./Stufe 8.

Adding the peppers

Add the strips of peppers cut into rather thin strips to the sauce and mix gently with the spatula.

Assembling the panini

Spread a little sauce on the bottom of the baguette, make a layer with the purple cabbage, a layer with the grilled chicken breast and a layer of white cabbage. Season with oil, salt and pepper. Add a little more sauce to taste and close with the top of the baguette.
