Description

This Parmesan Chicken Cutlets recipe is a family favorite! I've been making it for years, and it's always a hit. The chicken breasts are pounded thin, coated in a parmesan breadcrumb mixture, and then pan-fried until golden brown. The homemade tomato sauce is simmered to perfection in the Thermomix®, creating a rich and flavorful base. Topped with mozzarella and more parmesan, then grilled until bubbly, it's a comforting and satisfying meal. Perfect for a weeknight dinner or a casual get-together. Serve with your favorite pasta or a simple salad for a complete meal. It's a hearty and delicious dish that everyone will love!

Ingredients (10 ingredients)

  • 2 piece large, skinless chicken breasts
  • 2 piece eggs
  • 75 g breadcrumb
  • 75 g parmesan
  • 1 tbsp olive oil
  • 2 clove garlic cloves
  • 345 ml passata
  • 1 tsp caster sugar
  • 1 tsp dried oregano
  • 62.5 g light mozzarella

Preparation (8 steps)

Prepare Chicken Cutlets

Halve 2 large skinless chicken breasts through the middle then place the 4 pieces between cling film sheets and bash out with a rolling pin until they are the thickness of a £1 coin. Set aside.

Prepare Breadcrumb Mixture

In a shallow dish, combine 75g breadcrumbs with half of the 75g grated parmesan. Set aside.

Coat Chicken

Dip the prepared chicken cutlets in 2 beaten eggs, then coat thoroughly with the breadcrumb mixture. Set aside on a plate in the fridge while you make the sauce.

Crush Garlic

Place 2 garlic cloves into the mixing bowl and chop 3 Sec. / Level 7.

Sauté Garlic

Thermomix® Setting

Add 1 tbsp olive oil to the mixing bowl and sauté 3 Min. / 120°C / Level 1.

Simmer Tomato Sauce

Thermomix® Setting
10 min / 212°F / Level 2 100

Add half a 690ml jar passata, 1 tsp caster sugar, and 1 tsp dried oregano to the mixing bowl. Season with salt and pepper. Cook 10 Min. / 100°C / Level 2.

Pan-fry Chicken

Heat grill to High and cook the chicken for 5 mins each side, then remove.

Assemble and Grill

Pour the tomato sauce into a shallow ovenproof dish and top with the chicken. Scatter over torn pieces of half a 125g ball light mozzarella, and the remaining grated parmesan and grill for 3-4 mins until the cheese has melted and the sauce is bubbling.
